Mom's Steamed Spare Ribs with Black Bean Sauce - A Delicious Cantonese Dish

  • Treat yourself to a delightful Cantonese staple with my mom's recipe for Steamed Spare Ribs with Black Bean Sauce. This dish is a popular choice in Cantonese households, perfect for a comforting dinner or even a hearty breakfast when served with rice. The best part? It only takes 15 minutes to steam, making it a quick and satisfying meal that will have you reaching for multiple servings of rice.
    Ingredients:
    2 pounds spare ribs (enough for 2 dinner plate portions)
    3 tsp chopped ginger
    1 pc chopped chili (optional for spice)
    2 tsp minced garlic
    2 tsp black bean sauce
    Sprinkle of white pepper
    3 tsp light soy sauce
    3 tsp Chinese rice wine
    2 tsp oyster sauce
    1 tsp sesame oil
    1 tsp chicken powder
    2 tsp salt
    2 tsp sugar
    2 heaped tsp cornstarch flour
    2 tbsp olive oil
    Chopped spring onions, parsley, and chilies for garnish
    Instructions:
    Clean and drain the spare ribs to remove excess water.
    In a bowl, combine chopped ginger, chopped chili (if using), minced garlic, black bean sauce, white pepper, light soy sauce, Chinese rice wine, oyster sauce, sesame oil, chicken powder, salt, sugar, and cornstarch flour. Mix well.
    Add olive oil to the marinade mixture and stir until everything is evenly coated.
    Place the spare ribs in the marinade and let them marinate for 10-15 minutes to absorb the flavors.
    Prepare your steamer and place the marinated spare ribs in the steaming tray.
    Steam the spare ribs for about 15 minutes. If your spare ribs are thicker, you may need to steam them for a bit longer until they are cooked through.
    Once steamed, sprinkle chopped spring onions, parsley, and chilies on top for garnish.
    Serve the steamed spare ribs hot with a side of rice. For an extra flavor boost, mix the spare rib sauce into the rice and enjoy multiple bowls!
