Use a middle rack they're able to move if you don't have one there. Cook for the set time in the recipe and use a timer. Don't open the oven to check on it while it's cooking and just let it do its thing. When it comes to mixing the cookies. Mix your wet ingredients (egg, milk, etc) in a separate bowl and your dry (flour, sugar, etc) in another. Then you mix the two. I'd recommend using a mixer. Doing it by hand you have to be extremely patient. Use a cookie tray and if you don't have one you could even use a pizza tray anything that is a flat sheet will work. Use one layer of parchment paper and lightly butter it so your cookies won't stick.
