CHICKEN SPAGHETTI
2 Yellow Onion
1 Green Bell Pepper
3 Sticks of Celery
2 Carrots
4 Cloves of Garlic
2 Tablespoons of Olive Oil
5 Quarts of Water
2 Raw Whole Chickens
2 Tablespoons of Salt
1 Tablespoon of Garlic Powder
1 (12 oz) Can of Tomato Paste
2 (10 oz) Cans of Mild Rotel
2 (28 oz) Cans of Crushed Tomatoes
3 (15 oz) Cans of Tomato Sauce
1/4 Cup of Sugar
1 Tablespoon of Parsley Flakes
1 Teaspoon of Basil
2 Teaspoons of Salt
1 Teaspoon of Pepper
Dash of Red Pepper Flakes
3 Bay Leaves
1 (16oz) Pack of Spaghetti Pasta
Start out by heating a large pot over medium heat.
Also heat up a large stock pot filled with 5 quarts of water over medium heat.
Add the two whole chickens to the stock pot.
Cut 1 onion, 2 carrots, and 1 stick of celery into chunks, then add them to the stock pot with the chicken.
Raise the heat to high. As you start to see foam rise to the top, skim it out.
Keep the lid on in-between skimming, this will prevent too much water from evaporating.
Chop the remaining onion, bell pepper, celery, and garlic.
Add the 2 tablespoons of olive oil to the large pot.
Next Add the chopped onion, celery, bell pepper, and garlic to the pot. Sauté for 25 minutes stirring regularly.
As the stock pot increases in heat, and you’ve skimmed much of the foam, add 2 tablespoons of salt and 1 tablespoon of garlic powder.
When the stock pot reaches a rolling boil, cover, lower to a simmering heat, and let cook for one hour.
After you’ve been sautéing your vegetables down for 25 minutes, add in 12 ounces of tomato paste, and cook down for another five minutes.
After five minutes, add in the two cans of mild rotelle tomato, and cook down for another five minutes.
After five minutes, mash down the tomatoes and vegetables with a slotted spatula or potato masher.
Next add the crushed tomato, and tomato sauce.
Next add the sugar, parsley flakes, basil, salt, pepper, red pepper flakes, and bay leaves.
Blend everything together.
Raise the heat so that you start to see a slight boil.
Be careful, the sauce is thick and may pop.
When you start to see some slight bubbling, cover the pot, lower to a simmering heat, and let cook for two hours.
Be sure to come back and stir the bottom once every 10 minutes.
Meanwhile, your chicken stock should have finished cooking.
Carefully remove the chicken on to a tray.
Pour the remainder through a sifter over a large bowl or pot.
You may have to do this a couple times so that you can remove any lingering bits.
Once you have a clean broth, add two cups worth to the sauce, and leave the remainder in a pot off to the side.
Let the chicken cool down for at least an hour.
When the chicken is cool enough, then you can go about pulling the meat off the bone.
After the sauce has cooked down for two hours, add the chicken to the sauce, and let simmer for an additional hour.
With about 30 minutes left of cooking the sauce, heat up the chicken stock on a high heat.
Once you’ve reached a rolling boil, add the pasta to the stock. Boil the pasta according to the package directions.
Cook some garlic bread, and enjoy!

Definitely agree about taking the meat off the bones. We cook it with the chicken pieces in the sauce, and debone it when it's tender. Your way looks less messy.

When I was young, each year the local Masonic lodge had a chicken spaghetti supper fundraiser. This mirrors the chicken spaghetti the wives made. I don’t recall Rotel tomatoes - it was probably before they were sold! So good!!

After we eat our fill, I store spaghetti and the sauce together in the fridge. The noodles may be a little soggy the next day, but they taste so good as leftovers. We used to eat this when we on vacation in the bayou. Going to make one tomorrow!

I HAVE to give it a try. Have my own sauce, and it’s a easier, but if I can get my daughter to help, we’re going to do it. You can expect my critique, but I won’t hurt you none. I can already smell the kitchen!

I make my own sauce. I let it simmer for at least 10-12 hrs. Have found the longer the simmer the better the taste. Great review bro

My Aunt used to make it this way but only difference is that once everything was cooked she would take a buttered 13 x 9" pan, add the chicken and spaghetti together and grate cheese on the top and bake for about 25 minutes....

I didn’t have chicken but I used Ground Beef and the EXACT ingredients for this and this is the ONLY way I’ll eat spaghetti! That “Holy Trinity” makes EVERYTHING better!!!
Hard to believe nobody mentioned putting boiled eggs in chicken spaghetti. I'm not from Louisiana but grew up here and I've seen a lot of spaghetti with chicken and boiled eggs. Years ago I even saw it in a hospital vending machine.

I make chicken spaghetti. I have never used whole chicken though. I usually use chicken thighs and breast’s 50/50 and a couple food quality jars of sauce. I’m going to try it this way. Thanks!!
