Also, it looks like you are doing a beurre blanc style additions of butter. I REALLY love this idea - historically I've always just put the heat on high with buff sauce and butter. Excellent presentation chef, I would love to try these wings cooked in tallow.

Really? I’d take my own wings over restaurant wings any day. I slow cook mine so they’re extremely tender, and if I really want a little bit of crisp, I’ll blow torch it for a little. Restaurant wings are always over cooked, dry, with a stale kind of chewy that suggests they’ve been sitting around in the dry air for a while.
