- We are two days away from our first pig processing workshop of the season, and today we are wrapping up loose ends, setting everything up, and getting ready to feed the people coming to our home this weekend.

I love searching for Buggy in each video clip. It’s like looking for where’s Waldo. She walks in on the scene, takes a bite of some thing, and moves on. She’s delightful!
And in the opening scenes there she was, the little miss, in a dress with her hair done up. Sadly, growing up to be a young lady.

Meg, my family is from South Mississippi and Louisiana. My mom made gumbo with surf and turf. The generations that came before us used a lot of seafood because it was cheap for them. The surf and turf gumbo just keeps the tradition alive. Feeding as many as possible as cheaply as possible. And heck. Let’s be honest. All gumbo is good.

Hey Meg! I fix "surf and turf gumbo" too. It is delicious and we love it. When you are land locked, nice fresh sea food is not available. So, we do what we have. :)
In Days gone bye they used to sell sand soap blocks, to scrub kitchen tables, they were about ten inches long and five inches wide and about five inches high, tapered toward the top so they were easier to hold, it was a daily ritual to scrub the table daily, as the table was used for everything from butchering to eating, and lots of other stuff. I remember as a child watching my grand mum scrubbing the table.
my grannie from Mississippi said gumbo was" you throw in the pot, what you got, to feed a lot!"
I loved hearing Buggy singing in the background during first few minutes of the video. Your family working together makes your videos so enjoyable to watch. You are building wonderful memories. Meg your meals always look amazing. You are Wonder Woman.

We have hunkered down for a couple of days now.
We had our first Snowstorm ( didn't form) but the wind was fierce🌬 .
This weekend is wash everthing while its still 45°bedding etc.

I found that using salted shrimp (comes in a jar, used in Asian cooking) makes a fantastic substitute for shrimp in a gumbo for when you don't have any fresh. Brings the flavor to the party.
You just gotta reduce the salt in the recipe to compensate. I found that out the hard way, but the trick to removing salt from a soup or stew is raw potatoes. Cut into quarters or eighths, drop in, cook till soft. They soak up the excess salt, and as a bonus, bulk up a meal.
Our gumbo is based around andouille sausages, okra, green lentils and shrimp or salted shrimp. The green lentils brings more fiber, nutrients and protein to the party, and are super meaty and tasty.
Maybe finding an old broken top fold out table and taking the legs of that and putting them on the table top so you can still store it out of the way?
I made cinnamon swirl bread using Meg's recipe, well my husband said I had to lose the recipe cause he says he's gonna get fat, it was too good lol
Meg: I am in Louisiana. Seafood gumbo is my favorite but we also do rooster gumbo with smoked sausage when we cull the flock . We also make rooster spaghetti with the birds. Why don't y'all do pot lucks for the classes?
My gumbo has always had shrimp, sausage and some other meat. Usually chicken or pork. Cajun/creole is about using what is available or using up the leftovers.

It is so amazing to see how hard Meg works to make sure everyone is fed not just on a daily bases but on a busy day of butchering at the farm. When you were down putting hay in pins for the pigs, seeing the sun shining down on the green house and your home was just so beautiful. To think how thick those woods were before you put the pigs in the woods is truly amazing. Great video Ben shows great quality as always.

As I watch this on Friday morning I feel for both of u and know you are both working so hard in prep for these classes. Take care of yourselves! Stress like what I can relate to in seeing all Meg is doing in the kitchen can get to b too much that it isn't worth it.

Meg we use turkey in our gumbo because we make gumbo right after thanksgiving and so we use the carcass for stock. 😋

I absolutely love to see young people living this lifestyle! I’ve always made homemade food from scratch and Meg is super awesome and how she uses everything and frugally ways!! I’m 63 and still cook homemade food and it’s only hubby and I so I freeze whatever is left bc I always make way too much. Keep doing what you guys do and encouraging young people to live this wonderful lifestyle!!❤🙏💪🏼😎
