      That's a fact. Chicago barbecue is a real thing, not as well known as KC, Memphis, or Carolina barbecue. Rib tips and hot links are Chicago que. Served on white bread, with french fries.

      Thank you very much! Rib tips are so good! And of course you could really sweeten them up like burnt ends too! They make a great snack, or meal. If I only make 1 rack, I'll freeze them until I make another rack and make a meal out of them! Happy Sunday Brother!

    Gosh Kevin I learned a lot today!! I never knew what rib tips were!! And you did such a great job cleaning the ribs too. Ive never made st louis style ribs only babybacks. So now If I see the St louis Im gonna try them, because they are always cheaper than the baby backs! The green chili bbq sauce looked delicious.

      Thanks Karen! St Louis ribs are delicious too, there is a lot of extra meat in the rib tips and the end pieces where there aren't really any bones. Not everyone cleans them up, but if you don't they are kind of a pain to serve as individual ribs with those rib tips attached. And you are right, they are usually cheaper and I really like to have all that extra meat! You can cook them up or freeze them for another meal too! One commenter said he usually tossed them in soup which would be delicious too! Have a wonderful day Karen, and make Chris some of these! I know he will like them! :)

    How many hours before you put the butter, honey and brown sugar and wrapped them?

    How did the thinner pieces cook? I'd think that it would dry out (if cooked at same time and temp as the rest of the rib tips) since they are thinner than the thicker ones with the cartilage attached.

    Looks like you have something in the pan when you were ready to put them on the grill. What is it? Or do I start out with a dry pan?

    Kevin Now I have your secret recipe for the rub- I saw all the measurements on the container.
    I like Baby Ray's...you and your green chilis....lol.
    Costco always has very good products.
    They release a lot of liquid. I wonder if you can do something with that liquid like a dressing for something else...
    I bet you the next day they taste even better....

      Hahahaha yeah, we do love our green chiles!!!!! And yes, you don't need that container, the ingredients are on my mankitchenrecipes website :) It's a great base to start with with rubs, then you can adjust sugars, salt, heat etc. for your needs. Hmmm, I may have to thin that pineapple habanero sauce down with some olive oil to see how it tastes as a dressing? Have an awesome day Alexis and thanks for checking this out!       Thanks, they were tasty for sure! To get flavor from a Pit Boss, you just have to use other pellets besides Pit Boss pellets. Bear Mountain, Lumberjack, Kingsford. Just to name a few. I hope you have an awesome weekend!👍
