I haven't eaten chocolate for years - since discovering I'm lactose intolerant and since giving up all refined sugar - due to a phase of chronic fatigue (with candida) This looks great! Thanks for sharing. And its a great video. Love the clock interval - very pro!

Wonderful - I am delighted to hear it. Coconut oil works really well as a replacement, although you'll always need to eat it right out of the fridge or freezer (it tends to melt quickly, especially if it's warm). The advantage of using cacao butter is that it doesn't melt so quickly. Enjoy!

Perhaps I should start guiding meditation again... people are often commenting on how calm my voice is ;) I know panic attacks can be a real challenge and anything that helps us relax is a benefit. I like to add 1 tablespoon of ground flax or ground chia per 4 tablespoons of fat. It improves the omega3-omega6 ratio, gives it a bit more structure, and doesn't interfere with the flavor very much.

Will this chocolate melt if I pack and gift or sell? For how long can we keep them in room temperature? I live in India and it is really hot in the summers.

Coconut oil will give you a different effect - it is much softer at normal room temperature, so you would likely have melted chocolate ;) However it would work if you serve it immediately out of the fridge or freezer.
I'm going to try this, my cacao butter has arrived, just a small amount for now. I'd love to make a white chocolate, do you have a recipe for that? I'm also thinking I could melt this back down and blitz with hazelnuts to make a conscious healthy nutella. I do miss that but horrible ingredients and too much sugar and I know my family would love it too. They loved some dandelion honey I made from out our front yard. X
That sounds delicious - I've never tried nutella although I know a lot of people rave about it. I imagine the hazelnuts are roasted to bring out their flavour though. x
How does cost of making this compare to buying vegan chocolate or chips? Also, have you ever substituted cacao butter with anything else? Coconut oil say?

Thank you for the kind words. Coconut oil isn't the best alternative as it melts at normal room temperature... I have used it to make chocolate before but ONLY when I serve directly out of the fridge or freezer.

Hi Melissa, the only other substitute I can thnk of is coconut oil. HOWEVER, it melts more quickly that cacao butter, so you'd have to eat it right out of the fridge. That's the only work around that I know. Good luck :)

I tried to do this but i boiled it in a pan, and in the first one i made, it looked good but once i put it in the freezer, the sugar and started to seperate from the actual chocolate…. I used regular white sugar... and the second one i made, the sugar never melted properly and i waited to long so it eventually started to burn
Yes (sorry for late reply, only just spotted your comment) - you can or maple syrup - it will make the chocolate a bit softer, but I sometimes do that too.
Hiya, I tend to add it when the cacao butter has only just melted - if it gets too warm the sugar sinks to the bottom. This can be quite faffy though and it does depend on the coconut sugar batch. +moonytiger You could certainly experiment and see how it goes. I serve chocolate to lots of people who don't like 'regular' dark chocolate BUT they actually love this one. There's a good ratio to balance out the sweet and bitter. It also depends which cacao you use. All of the raw cacao products I've ever used are divine!
The recipe really does need cacao or cocoa butter to work in the way I demo it. You could however, try to use coconut oil instead of cocoa butter, although you'd have to serve it right out of the fridge or freezer as it would melt really quickly at room temp. Likewise you can sub the coconut sugar for any natural sweetener like maple syrup, although it would make it really soft, unless you serve right out of the fridge freezer. If you sub them out, then it's going to be quite a different recipe, unfortunately.

The probability of there being bugs in your cocoa powder is darn near a hundred percent. You should look up how chocolate is made. Furthermore humans were designed to eat meat. It was not until relatively recently with the development global trade that you could get all your nutritional values strictly from plant life. No geographical location on Earth naturally has all of the amino acids vitamins and minerals necessary to sustain a healthy life in the native plants, unless you include meat in the equation. Furthermore getting all of the nutritional value at this point in time solely from plants is as an extremely energy intensive process burning billions of gallons of fossil fuels every year, just so you can claim that your environmentally sound and friendly or something.

It's meant to be cacao butter and best melted in a heat proof dish in a pan tbh.
