Can i ask.. why celery? I dont know why but it just feels very random. How does it compliment the two others? (Im not a fan of celery so i genuinely cannot tell what its purpose is in any dish 😭)
It’s compliments the flavors of the carrots and onion! I don’t like raw celery to be honest, but it’s great in this, you don’t really taste it! You can always replace it with green pepper for a twist :)
Depends on the country. In France it is mirepoix, in Italy it is soffritto
Key difference is France uses butter and Italy uses olive oil
Don't they take different times to cook. Onion > carrot > celery? Although I understand putting them in together makes it easier..
