Thanks so much for putting this together! Just got the parts and got the job done in 1.5 hours or so thanks to your guide. It's a little hard to do the wipe test with the ceramic burrs but I believe I was able to get a clean wipe on the first try doing the alicorn alignment too.

There's a couple more details here: espressoaf.com/manufacturers/baratza/alignment.html#fortevario-parts-swap You don't need the motor plate generally, I think that's really just to make adjusting the belt tensions easier.
Not sure why I would do this to my Vario. It works perfectly. The metal parts are designed to accommodate extended service demands of a commercial application. I make 4 espresso shots a day. The plastic version is more than adequate. If you must have metal parts just spend the additional $300 and get the Forte.
Sure, the plastic is fine. The metal however is stiffer and will hold shape more accurately, and screws can be more tightly torqued, when hyper-aligning the chamber to get more consistent and accurate grinding. Others have noted that with hyper-aligning the Vario can grind beans on par with grinders twice its cost.
Hey, I was trying to fortify a vario, with burrs included and I don't know if I did everything correctly, I would like to know more... After reassembling I hear the burr touch but some coffees are not fine enough (I bet its alignment) also Ive seen bottom burr carrier can be removed easily and I think that's wrong... I was replaying your video to make sure its right but I did not see anything strange
Hi, yeah a little trap when swapping ceramic and steel burrs is that they have a different height! The steel burrs are much taller, so the touch point will be quite different. You can either just get used to having a different touch point, or this can be adjusted with the little allen key under the rubber plug near the coffee output chute.

I've used liquid chalk pens for tests on ceramic, they work quite well. Eg. amzn.asia/d/7eyU5pn
