    Your garden looks great. We have lost our entire crops this year here in the Philippines. We cannot get to the farm as our home there is still under construction and we live 40 miles away now and have been on quarentine lockdown since March 15 th. But the great thing is we gave all the crops to any neighbor who wanted to pick them and loaned the chickens to our neighbor there. Hopefully next year the home will be finished and this crazy pandemic will be over.

    I'd say good on you both for giving it a go Mark !! Nina packin' it in is no failure because as you said , she was ill from the beginning. Plus her out at work she'd need a lot of protein.     My favorite starchy thing to grow in the garden is potatoes. Extremely versatile, satisfying, high calorie vegetable. Satisfies a lot of cravings.

    When I first discovered you last year you inspired me to be more self sufficient. I'm growning tomatoes in containers for the first time. Next year I'm going to try potatoes and peppers also. I've been learning how to can. Thanks for being you. Thanks for being an inspiration.

    Could not get the memory out of my head of when you refurbished the gourd tunnel and realised how much better it was when you moved the support poles to the edges. How many times in our life have we realised a better way to do something. Great to keep improving things over time, love your honesty. Best wishes for Nina's speedy recovery.     You're missing carbs from grains. When you get the mill, stock up on grains so you can make bread, cakes, etc. Makes a world of difference having bread with veggie soup or eggs on toast.

    This experiment is really interesting and I am exited to hear what Nina has to say about it. I live in germany and grow vegetables in a couple of raised beds. Not nearly enough to get a week of food out of it. When I see your garden, the only thing I can think of is: "I need more acreage".

    Always a pleasure Mark. Thanks for doing this experiment. I'd like to get to the point where I can try it out with my family as well. We only have about a 450sq ft food plot and 9 quail that we hatched out and are trying to grow our flock with. Trying to grow more every year. By the way, my 1 year old son says "g'day" every time you pop up 😂

    Flour substitute- ground nuts. I typically use almonds, but you can dehydrate pecans and use those.

    Flour can also be made out of potatoes, sweet potatoes, peas, beans, coconuts, almonds etc. I'm not sure what of that list you can grow there but now would be a great time to get some going. Your place looks gorgeous Mark. Ive been watching your other channel for years now and the progress is jaw-dropping amazing!

    Well done! It is quite an accomplishment to be able to even have enough food available from your garden to supply all your food. This is the first season I've been able to eat almost exclusively from my garden. I can't grow in winter however, so I am planting as much as I can for storage and freezing. I love your content.     Good on you Mark and good on Nina for making a solid effort.
    I really recommend learning how to eat and cook vegan food to learn what you need to thrive, not just survive without meat, eggs and dairy.
    I was vegan for three years and it taught me a lot about food. In the end I got sick of looking at my food so closely but I have learnt to appreciate vegan food for what it is (and isn't).
    It's so much easier to add meat, eggs and dairy when you have them and when you don't, you're still prepared to make filling meals that keep your protein and carbs close to daily recommended levels.

    Good on Nina for trying like she did even though she was sick. and glad you understood her need for more than just what she was getting from your garden as well, her body would need a whole host of different and good foods to help boost her immune system to make her recovery quicker. its not easy what you've both been trying to do and you should be proud of your efforts.

    Hi Mark, leaving 6 recipe ideas that are filling with what you have in the garden and some crop ideas:
    Hungarian Lecso (check allrecipes for Hungarian Lecso II recipe) -> Tomatos, eggs, Bell peppers.
    Allo Mattar (indian traditional curry -> Potatoes, peas, tomatoes )
    Lentil stew (vegetarian) -> Lentils, carrots, tomatoes, whatever you have to throw in there
    Vegetarian Pasta with Tomato sauce -> Use zucchini pasta, make a tomato sauce with garlic and some onion add zuchinnis and egg plants in there in small cubes.
    Tortilla (spanish) -> Potatoes and eggs as a base, combine with any vegetables you like.
    Kartoffelpuffer (Potato pancakes) -> Potatos, Flour*, Eggs (I know you cannot use flour but you can actually make flour from any starchy vegetable or root crop just get yourself a manual mill!) Make an apple mouse and serve on top.
    Turkish bean and tomato salad -> Green beans, tomatoes, salt, onion, olive oil
    You can make stock from vegetables without needing to buy it only need a dehydrator, you can make corn-flour with a manual mill easy to get in the US.
    Crops that could be interesting for you:
    Fava beans (harvested mine now in July as incredible as it sounds since usually a January crop)
    Sweet potatoes
    Chayote (can be grown in containers, large produce)
    Rat's tail radish
    Yardlong beans (large produce)
    Chickpeas, lentils, Soy Beans
    Okra

      I'm in central Florida. Our weather is pretty similar to their's but Florida gets down to the 20's at times. Rare but enough to kick my butt.

      Nancy Fahey that blows my mind! Last year in Northern Indiana our winter got down to -10 degrees F. Normally we don’t get that low, but in 20 degree weather many people don’t even wear coats up here.

    Sorry to add to the work load. I'd be interested in dried food content. As part payment - it's story time. As a young man I volunteered to do guard duty over the Xmas to NY period at Gallipolli Barracks Enogerra. 24 on/off. They gave me a room of a fella on deployment. On the 24 off I volunteered in the kitchen. I was young. The machine that peels potatoes was amazing. Like a washing machine with the inside made of a real coarse sand paper and you just dropped the spuds in and the machine swirled them around for a minute and out came no-skin spuds. Incredible.     Mark, maybe you could make a self sufficient vegetable cookbook of some type?? Or just a self sufficient cookbook? Maybe, a how to can preserve food book? Hell, just do all of them. People have forgotten how to preserve food. We did it growing up, but my kids don't have a clue! (I'm 56) love your videos Mark.

    Hi, your wife should not feel bad, good on her for lasting this long while being sick. Health always comes first. Looking forward to your final video. We tried to do a vegetarian month using recipes from one of our favourite cookery books. That did not go well. The need to fish/meat got the better of us after just a week. So well done you for lasting this long. The health benefits of what you are doing seem to be great, we wish we had the will power to see it through. We are in a glut of zuchinis and cucumbers/cornichons at the the moment, we are preserving them, will be putting up some picks in the forum soon. Can't wait for the final video.

    I would love to see you do this challenge again during a season where you could harvest lots of protein rich crops and lots of planning (sunflower seeds, pumpkin seeds, soybeans, other dried beans... other nuts, maybe even trying legumes. and i have no idea if you could harvest all these things at the same time lol). i’m in urban france and am just starting to garden here in a very generous person’s backyard! back in toronto (canada) i had a garden share in a neighbour’s backyard and it was fab! my main focus here is expanding a garden sharing program and growing mexican crops like tomatillos and poblanos that aren’t available here at all. love your channel(s)!

    Use green bananas if you have them as your flour replacement. Get them super firm and green, peel and slice them thinly, dehydrate them, then grind into a powder and sift. I do this as a gluten free flour replacement with green plantains and it’s so flavorful. You could also try using them with making tostones.

    Fermented vegetables are a great way to get more nutrition from your garden. Fermenting the tougher vegetables softens them up and adds flavor.

    One possibility for a mill is if you can find a home brew beer store near you that specialises in all malt beer, they often sell a very inexpensive mill. The 2 brand names are Corona and Porkert. They are plate mills and work well enough for grinding a few kilos of grain at a time. I guess you can probably pick one up for less than $100 if you look around. The nice thing about them is that they are good for doing both dry and wet ingredients. I've crushed kilos of wet soy beans for making soy milk and tofu, for example. Not fantastic for wheat flour, but not terrible either. If I were doing the homesteading thing, I would definitely have one since they are hand cranked and very versatile (and basically indestructible).

    Another good video Mark. I hope Nina returns to full health fast. We all need protein but can access plant based sources with proper planning. Some bodies absorb differently than others. It will be interesting to note whether you will add more protein sources to your Spring planting this year. Oh, I'm looking forward to your review of your mill as i have been looking for a good one too.

    And yeah I know what you mean, here in NC in the town I live in, its getting hard to find canning jars. very odd as I didn't think that many ppl still canned...........guess I was wrong.

      I think there has been a resurgence of gardening and canning this year, due to the COVID situation. I’m having a hard time replacing my pressure canner most places are sold out.

    If you have dried beans you can also grind them into flour. Garbanzo bean flour can be used to make Italian socca. You can also make falafel from garbanzo. Nina was smart to quit before she got sicker, I hope she feels better soon.

    Hope all goes will for Nina you guys are awesome, mark she may have been going through a detoxification process in her body my family and I went through that I'm now vegan and my family are vegetarians , some of us got sick or had to go to the bathroom to have a poo time in any event please mark don't give up you can do this 21 days keep up the good job ...

      You know, my Grandfather and I would go fishing and although catfish are not considered a prize eating fish we'd still keep a few and eat them (usually on the river bank campfire) and I have to say they were always pretty tasty! So yes, it is worth considering alright. Cheers :)

    A very healing green smoothie is kale, spinach, some frozen fruit or over-ripe bananas, water and whole flax seeds if you are using a good high power blender to grind up the flax (Vitamix). It is an anti-inflammatory smoothie and sickness reversing for many. You can live on this alone ( a blender a day) for at least 21 days. In hard times, if we have greens growing, we can make it one way or another! I was off blood pressure meds within 4 days and lost weight without effort or hunger. So, if hard times hit, or bad health, we do have options. This wasn't an 'ad' for something, just info and my experience.

    Regarding taking corn kernels and grinding them, I found toasting my corn kernels just slightly made it easier for my electric coffee grinder to turn it rather than into meal into flour.

    Manual mills are very hard to find for the good ones. But if you just want coarse milled grain the cheap ones are on Amazon.

    When we decided to move into a plant based diet I ordered some vegetarian meals from Hello Fresh. Really helped me learn some yummy ways to eat vegetarian without that boredom - easy.

    Try it again but though spring and I would like to to see more preserved foods and sauces that sort of things but thanks to you I started experimenting myself I have always had a garden myself but I have been experimenting with different ideas so far it's average but have had some success especially with growing out of season

    I have to do a low fodmap diet off and on. It’s rough getting use to not eating a wide variety of fruits and vegetables plus no gluten or lactose. You learn what you can and cannot tolerate once you start adding things back. Some things only in small amounts. I plan my veggie garden around those types of low fodmap veggies.
