Being a long time sub of the channel and someone who is studying foreign languages it's so nice to see someone progress with pronunciation so well. just thought it was really wholesome :)

If you don't want to use the oven, you can also put the mushrooms in a salad bowl and sprinkle them with a bit of salt. The salt draws the water out, so after 15-20 minutes you can just pour it out. It also removes the bitterness from green vegetables!

I had/have ARFID diagnosed, and this channel has actually really helped me. It gets me a little hungry and more open to foods because I can’t smell see or feel them in person- just a video, so when things end up looking so good it helps me.. even when I just end up picking at things and getting a little nauseous. It’s helped a lot, so thanks Jun and Rachel.

My seventeen-year-old little brother has both ARFID and a Sensory Processing Disorder. He eats cubes of cheddar cheese, French fries, peanut butter on white bread, and the occasional bowl of strawberry applesauce. I have long strongly suspected that he is on the spectrum, but our mother refuses to have him evaluated as she's afraid it will "reflect poorly on her." . . . And that statement alone describes my own childhood in a nutshell.

What most people in America are familiar with is food from the northwest of Mexico, since that is what you get at the chain food stores. Most of that is rice, beans, onions, cheap cuts of beef either ground or pounded thin, chicken, cilantro, tomatoes, and various forms of chili. Corn and flour are common in the form of tortillas. In coastal Mexico (and there is a lot of that) all kinds of fish and shellfish show up, usually with a mildly acidic sauce made with limes or the like. Mushrooms are wonderful, but just offhand I can't think of any Mexican dishes that use them, at least in a recognizable form.
Americans are used to Tex Mex which has very little association with authentic Mexican food. While its believed to be inspired by Mexican food, it’s derived from Spanish influences after they drive off natives from what is now Texas and the resources they brought to Texas.
Yes but not really. The "mexican" food americans are familiar with is tex-mex, which is very different from the mexican food that is eaten in the northern regions of mexico. It's just a variation they made with the ingredients they liked (yellow cheese, kidney beans, fajita, rice, sour cream and avocados), and since most of those ingredients are quickly assosiated with mexican cuisine (whether it's as a whole or individually), it definitely isn't close to mexican food, not even in the border.

I'm EXTREMELY picky, and watching Jun cook made me want to try new things, especially Japanese food. I've recently tried simple things like miso, and I taught myself to get used to the texture of rice. Slowly but surely, I'm trying to expand my palate lol

I love how you can easily pinpoint the main difference between them while stuff is being made. Jun is all focused and technical, while still managing to pay attention to Rachel. I know this video is from 3 years ago, but thank you so much for talking about ARFID! I actually gasped with delight when I heard it mentioned, I never expected a comfort youtuber couple of mine to know about something that impacts my life daily. I think it's really funny that you mention no one with ARFID would watch Juns channel, because I do so I can get myself to eat! Along with ARFID I have other disorders that make it really hard for me to handle eating even my comfort foods- especially when I wake up, and while I don't think I'd eat a lot of the food made on the channel, watching it being made still makes me hungry enough to eat! I have Jun to thank for a lot of times when I wasn't woozy during the day because I wasn't able to choke my food down. Anyways- thank you for mentioning ARFID, I wish it was talked about more!

I always find it interesting to know what people consider mexican food, whether that’s taco seasoning packets or burritos or los angeles street tacos or whatever lol
as a mum of 3 = I 've always had a rule in my house when it comes to food. They MUST try a food - if they genuinely don't like it then fair enough.. but through this method they have discovered a lot of foods that they wouldn't have had if I hadn't made this rule.
My mother would make use eat so many spoonfulls, usually threeish. It was an achievable goal if we genuinely didn't like it, and enough volume to get past the deliberately not liking it thing.
My parents and a boarding school use to force me to eat boiled vegetables, which use to make me border on being sick. For almost 20 years I did'nt touch vegetables untill I started to pan fry some in ghee or coconut oil for keto.
This helped me with my food issue I think I have been scared to try new things a lot until I met my partner and still am but it’s helped me since thankyou heaps
Rachel!! You're not alone! There are a whole bunch of things I can't eat because of texture and taste, but luckily I've been keeping track of all my mom's recipes so that I can make food that I like to eat. I rarely like to try new things just because it freaks me out that the possibility that I might not like the food is so high. It's so bad that I have the problem that I can't even eat food at other friends' houses unless I've seen how the food has been made. So I get it! I just didn't know that my brain not letting me like foods because of texture and taste was actually because of something psychological, now I know why!
Really enjoyed the discussion about ergothioneine. i love chemistry and biology and biochem. mushrooms are awesome, i love king oysters. and enoki and shiitake. i'm veg so i eat tons of mushrooms. they're so delicious and some of them really have a seafood flavor and texture, or in the case of shiitake, are just so savory wnd delicious cuse of the glutamate amino acid in them, that activates the umami taste buds. I don't really care about my health cuse i don't wanna be alive, but i do enjoy tasty foods, and mushrooms are delicious
Please get some help if you're feeling that way about life. Look into your country's/state's/insurance's options for therapy. You might be surprised what is covered! I've been close to suicide myself, but you CAN get better, feel better, and grow to enjoy life. Help exists, you just have to look for it.

I remember when I was really young, my mom cooked a sunny side up egg for breakfast because we had grandparents visiting who preferred a traditional Western breakfast and I was very excited to eat the egg until I was traumatized by how cold the yolk was. My mom was a vegetarian and we rarely had sunny side up eggs so that might’ve affected the resulting egg. After that happened, I just hated egg yolk in any form. I could tolerate boiled eggs only if I didn’t have to eat the yolk (which in general my mom overcooked anyways) and I preferred scrambled eggs. It wasn’t until high school when my mom bought organic brown eggs from Costco and coaxed me to eat them by breaking the egg yolk while frying them that I began to like it. Organic eggs have a different taste (at least to me) so it definitely helped while I ate it with brown rice. Even if my mom wouldn’t cook the broken yolk all the way, it was palatable. And now, I can eat regular non-organic eggs too! Haha It was quite the journey but I got there~ (On the other hand, eating garlic, cooked or raw, makes me gag and I don’t think that’ll ever change.😅)
Rachel's right! I hated green, red and yellow peppers but recently I started chopping them in cubes and cooking them. Now I try to add them to my meals whenever I can.
I've been a subscriber for many years. Not only do I have food texture issues (mushrooms are a big problem there), I don't even enjoy cooking. At all. However, I enjoy watching people who enjoy cooking doing what they love. First, they often make it look effortless, which inspires me to try to better my technique. I'm also inspired by the creativity I see, which motivates me to try cooking foods with which I'm unfamiliar. Even though I don't like to cook, I have to for my family so improving upon & expanding our menu is important to me. I constantly struggle with my dislike of most vegetables. They taste either musty, bitter/grassy, or both. I've been told to smother them with cheese, but I don't really like cheese, either. Texture comes into play with veggies a lot, as well. Roasting veggies makes them the most palatable for me, but I still wouldn't claim they're delicious. All of that being said, I continue to test my palate even when I've disliked certain foods for decades. If the opportunity arises, I'll try them again...& in the way of Andrew Zimmern from Bizarre Foods: Take at least two bites! You never know when your tastes will change or if something has been prepared in a way that makes it enjoyable.
I didn’t realize that someone else had the same eating issues I did when it came to texture and that kind of thing with food. I always thought I was crazy for feeling that way, now that I m ow it’s an actual condition people can have I finally feel like there might be a solution for me.☺️

Rachel’s ARFID summary made me realize what I’ve been doing for so long. Ever since I was about 6 I’ve had an avoidance of soft fruits and vegetables (bananas, pumpkins, spinach) because of the texture. Recently I’ve been having more smoothies because it gets rid of the texture, and I started eating ground spinach in beef recipes. Thank you for the advice Rachel I’m going to try it and I’m sure it’s going to be super helpful because I’ve already been kind of doing it recently without realizing!
I have ARFID likely, and I have autism and sensory processing issues. I'm extremely picky and new foods are really difficult. It's very cool to see someone speak up about this on a channel I love! A lot of these foods intimidate me but it makes me really happy every single time Rachel has mentioned being picky and trying new things, lol. You just have to open yourself up!
Actually, I have an eating disorder and a sensory problem. I often fail to eat more than once a day, and before I met my husband I didn’t eat much for healthy things at all. We’ve gone completely vegetarian, and almost zero waste shopping! Since we’ve met I’ve learned a lot from him, he loves to cook and that’s part of the reason why I enjoy watching Jun’s videos. Don’t get me wrong, I’m subscribed to all of your channels but. I find your conversations and cooking noises really soothing. It reminds me of my husband and I :) thank you for the info on the amino acids by the way, my family has a history of cognitive memory disorders as well and I recently introduced super finely chopped mushrooms into my pastas and vegetarian/vegan meats when sautéing.
What I have learnt from this - eating lots of mushrooms will help you leesen the chances of dementia when you're older. Good thing I love mushrooms. Also, in my country, they do sell a lot of the king oysters and the small stringy type ones.
Rachel! This is big news for me. I definitely do not have ARFID, but my partner does! I had never heard about this, but reading it, it's spot on for them. Thank you! Maybe some day she will be able to branch out, even a little bit, or be able to eat something new without getting sick.
The closest to authentic Mexican food, in America, is most likely found in California, between LA and the border. There's a handful of restaurants that are good, but most of the best are taco trucks.

i legitimately think i have ARFID now, i've had some type of eating disorder all my life but never knew what it was, till you just described ARFID and that is EXACTLY what i experience with food. so thank you, Rachel! and i love watching Jun's cooking videos. Some of the food grosses me out but it's not real to me and i can't smell it so it doesn't bother me!

I know this video is from 3 years ago, but thank you so much for talking about ARFID! I actually gasped with delight when I heard it mentioned, I never expected a comfort youtuber couple of mine to know about something that impacts my life daily.
I think it's really funny that you mention no one with ARFID would watch Juns channel, because I do so I can get myself to eat! Along with ARFID I have other disorders that make it really hard for me to handle eating even my comfort foods- especially when I wake up, and while I don't think I'd eat a lot of the food made on the channel, watching it being made still makes me hungry enough to eat! I have Jun to thank for a lot of times when I wasn't woozy during the day because I wasn't able to choke my food down.
Anyways- thank you for mentioning ARFID, I wish it was talked about more!

as a mum of 3 = I 've always had a rule in my house when it comes to food.
They MUST try a food - if they genuinely don't like it then fair enough.. but through this method they have discovered a lot of foods that they wouldn't have had if I hadn't made this rule.
My mum did that and it was honestly the best thing she could have done. So many foods that I'm fond of now than when I was younger because of that.
My mother would make use eat so many spoonfulls, usually threeish. It was an achievable goal if we genuinely didn't like it, and enough volume to get past the deliberately not liking it thing.
I'm glad I'm not the only one that only eats half my meal and takes the rest home! I do that whenever I go out because the servings are so big here!

My parents and a boarding school use to force me to eat boiled vegetables, which use to make me border on being sick. For almost 20 years I did'nt touch vegetables untill I started to pan fry some in ghee or coconut oil for keto.
Baked veges (cauliflower, broccoli) are good too. My family was the same and always overboiled / burnt all the foods.
Same, only I bake or roast them w/ just a little avocado or grapeseed oils & the reason wasn't keto, just generally trying to be healthier.
Try roasting or steaming them!
It's always comforting watching Jun cutting the ingredients and putting all the things in place.... it soothes my OCD
This helped me with my food issue I think I have been scared to try new things a lot until I met my partner and still am but it’s helped me since thankyou heaps
Rachel!! You're not alone! There are a whole bunch of things I can't eat because of texture and taste, but luckily I've been keeping track of all my mom's recipes so that I can make food that I like to eat. I rarely like to try new things just because it freaks me out that the possibility that I might not like the food is so high. It's so bad that I have the problem that I can't even eat food at other friends' houses unless I've seen how the food has been made. So I get it! I just didn't know that my brain not letting me like foods because of texture and taste was actually because of something psychological, now I know why!

Really enjoyed the discussion about ergothioneine. i love chemistry and biology and biochem. mushrooms are awesome, i love king oysters. and enoki and shiitake. i'm veg so i eat tons of mushrooms. they're so delicious and some of them really have a seafood flavor and texture, or in the case of shiitake, are just so savory wnd delicious cuse of the glutamate amino acid in them, that activates the umami taste buds. I don't really care about my health cuse i don't wanna be alive, but i do enjoy tasty foods, and mushrooms are delicious
Please get some help if you're feeling that way about life. Look into your country's/state's/insurance's options for therapy. You might be surprised what is covered! I've been close to suicide myself, but you CAN get better, feel better, and grow to enjoy life. Help exists, you just have to look for it.

I remember when I was really young, my mom cooked a sunny side up egg for breakfast because we had grandparents visiting who preferred a traditional Western breakfast and I was very excited to eat the egg until I was traumatized by how cold the yolk was. My mom was a vegetarian and we rarely had sunny side up eggs so that might’ve affected the resulting egg.
After that happened, I just hated egg yolk in any form. I could tolerate boiled eggs only if I didn’t have to eat the yolk (which in general my mom overcooked anyways) and I preferred scrambled eggs.
It wasn’t until high school when my mom bought organic brown eggs from Costco and coaxed me to eat them by breaking the egg yolk while frying them that I began to like it. Organic eggs have a different taste (at least to me) so it definitely helped while I ate it with brown rice. Even if my mom wouldn’t cook the broken yolk all the way, it was palatable.
And now, I can eat regular non-organic eggs too! Haha It was quite the journey but I got there~
(On the other hand, eating garlic, cooked or raw, makes me gag and I don’t think that’ll ever change.😅)
Rachel's right! I hated green, red and yellow peppers but recently I started chopping them in cubes and cooking them. Now I try to add them to my meals whenever I can.

I've been a subscriber for many years. Not only do I have food texture issues (mushrooms are a big problem there), I don't even enjoy cooking. At all. However, I enjoy watching people who enjoy cooking doing what they love. First, they often make it look effortless, which inspires me to try to better my technique. I'm also inspired by the creativity I see, which motivates me to try cooking foods with which I'm unfamiliar. Even though I don't like to cook, I have to for my family so improving upon & expanding our menu is important to me.
I constantly struggle with my dislike of most vegetables. They taste either musty, bitter/grassy, or both. I've been told to smother them with cheese, but I don't really like cheese, either. Texture comes into play with veggies a lot, as well. Roasting veggies makes them the most palatable for me, but I still wouldn't claim they're delicious.
All of that being said, I continue to test my palate even when I've disliked certain foods for decades. If the opportunity arises, I'll try them again...& in the way of Andrew Zimmern from Bizarre Foods: Take at least two bites! You never know when your tastes will change or if something has been prepared in a way that makes it enjoyable.
I didn’t realize that someone else had the same eating issues I did when it came to texture and that kind of thing with food. I always thought I was crazy for feeling that way, now that I m ow it’s an actual condition people can have I finally feel like there might be a solution for me.☺️

Doesn't their computer or TV have closed captioning? It's quite distracting to me to have a bunch of the visual content obstructed by huge bands of paragraphs running across the bottom of the screen. This is the point where almost everything he is doing to show you how to prepare something would be covered up if it had captioning

Rachel’s ARFID summary made me realize what I’ve been doing for so long. Ever since I was about 6 I’ve had an avoidance of soft fruits and vegetables (bananas, pumpkins, spinach) because of the texture. Recently I’ve been having more smoothies because it gets rid of the texture, and I started eating ground spinach in beef recipes. Thank you for the advice Rachel I’m going to try it and I’m sure it’s going to be super helpful because I’ve already been kind of doing it recently without realizing!

I have ARFID likely, and I have autism and sensory processing issues. I'm extremely picky and new foods are really difficult. It's very cool to see someone speak up about this on a channel I love! A lot of these foods intimidate me but it makes me really happy every single time Rachel has mentioned being picky and trying new things, lol. You just have to open yourself up!

Actually, I have an eating disorder and a sensory problem. I often fail to eat more than once a day, and before I met my husband I didn’t eat much for healthy things at all. We’ve gone completely vegetarian, and almost zero waste shopping! Since we’ve met I’ve learned a lot from him, he loves to cook and that’s part of the reason why I enjoy watching Jun’s videos. Don’t get me wrong, I’m subscribed to all of your channels but. I find your conversations and cooking noises really soothing. It reminds me of my husband and I :) thank you for the info on the amino acids by the way, my family has a history of cognitive memory disorders as well and I recently introduced super finely chopped mushrooms into my pastas and vegetarian/vegan meats when sautéing.
What I have learnt from this - eating lots of mushrooms will help you leesen the chances of dementia when you're older. Good thing I love mushrooms. Also, in my country, they do sell a lot of the king oysters and the small stringy type ones.

The closest to authentic Mexican food, in America, is most likely found in California, between LA and the border. There's a handful of restaurants that are good, but most of the best are taco trucks.
