Thanks for watching. We fooled around with barrels for a little while now but I think we are going to start having more fun with them. I want to age an old fashioned in one like the Handy and Schiller is barrel finished by BT
Cool little experiment. Since this is now a second fill barrel I would think you can expect other changes to come forward and some of the ones you noticed this round to not be present. For the 3rd fill go nuts and use BT white dog and let it sit for min 6 months
It also matters where are you Adrien at, what temperature it’s aged out, etc., what time of the year you aged. So did you leave it on your kitchen countertop? Or, did you put it in your attic, or did you one week put it in the attic in the next week you put it in the basement and you kept on doing that?
I do move the barrel around and roll it to get the whole barrel used for the charring. I aged another one for 9 months and started it upstairs and then had it in the basement to finish. Also being in New England we had big temp swings
Just put it back in the barrel and wait another 2 weeks. Why would you start all over again with a new bottle? Use the new bottle to top it off. Cheers!

Its fun to start aging and playing with flavors. I've got 2 more barrels on the way now too.

When you remove it from the barrel and return it to the bottle, let it rest for a week or so to discover its final form.
I want to try this but age it for like 1-2 years lol
It might get over oaked in this small of a barrel for that long maybe the 5 liter barrel would work for that long
Maybe leave it in the barrel for 3-6 months?
I was going to do 6 weeks but I think we may go longer 2-3 months at least
