Got the conundrum too.

Apparently they're given time off camera to write it down.
I went waaaay out there for 341:
6 + 9 = 15
15 * 3 = 45
45 - 7 = 38
38 * 7 = 266
266 + 75 = 341

i got 548 the same way as your woman but in much longer time
896=(7+5)×75-8+5-1
