    Disco Fries Recipe
    Ingredients:
    - For the Fries:
    - 2 lbs - 1 kilo potatoes, cut into fries
    - 1tbsp cornflour/cornstarch
    - 2 tbsp vegetable oil
    - Salt and pepper to taste
    - 1 tsp baking soda in the water with the chips/fries
    - For the Gravy:
    - 2 tbsp unsalted butter
    - 2 tbsp all-purpose flour
    - 2 cups beef broth made from stock, cubes, or granules
    - 1 tsp Worcestershire sauce
    - pinch dried thyme
    - Salt and pepper to taste
    - For the Toppings:
    - 1 1/2 cups shredded mozzarella cheese
    - 1/2 cup shredded cheddar cheese
    - Optional: chopped fresh parsley for garnish
    - Preheat your oven to 400°F (200°C).
    - Airfyer 380°F (190°C).
    Cook your chips/fries for approx 28 mins.

    OK, enough tosh from the Canadians trying to get one over on the folks everywhere else - Which indicates that the folks making a comment do not know their own National dish -THIS IS NOT POUTINE!! Poutine is made with fresh curds. Mozzarella, used in Canada, is a shortcut for those who are not skilled enough or do not have the time to make fresh curds. ( I have made fresh curds today and will upload POUTINE in a couple of days!)       Poutine is its own special dish, as you say made a specific way with specific ingredients!!! Everything else is just chips with various toppings, like In and Out's Animal Fries! It's tasty but it is not poutine! Anxiously awaiting your poutine video!!! I know it will be excellent and informative!!!

      LOL I was literally coming here to say, this is just a version of poutine! It IS! I have never heard of "New Jersey Disco Fries." That's like saying a pizza isn't pizza if you put Cheddar on it, rather than mozzarella. Come on, now.

      @@BackyardChef My daughter calls them "Gravy Fries", and she loves when I make them. I'll try your recipe with the baking soda (brilliant idea, mate).
      I usually make them for football games when I have my friends over and we've had a few pints. Making them crispier will make them 4 star Michelin!

    My personal version of this is with chili instead of gravy because the closest I came to a disco was playing with Darcy doll and watching Airplane! But this looks so good I will be trying it soon!

      Yes, I agree entirely! I've said it thousands of times: the moaners and fanatical purists are those who sit in their armchairs and criticise everything. They are the ones who have no idea about cooking. Listen to the nonsense on this thread - most are saying it's Canadian - well, those Canadians have NO clue about their own dish - that makes it embarrassing to even comment. The ones in New Jersey are saying they have never heard of it. They need to do some research if they want to criticise, and to be honest, I'm not interested in folks like that; I have never been and never will be.     Grew up in the beautiful Garden State (NJ) and these are part of NJ dinner culture. Do remember having these back in the day. We would decend on the dinner late night/ early morning and someone would always order a large platter to share. Thanks for the nostalgic recipe. Always learn something new from your videos, but this one brought such fond memories. Thank you!

Lots of Italian food, Greek dishes, all kinds of food, breakfast all hours of the day and night. Bakeries that use real ingredients. Sky high pies and cakes. All home made, all delicious. I miss NJ diners so much.

      Yeah I'm in North Jersey and there's not a single diner where you can't get disco fries. I was actually pretty old before I found out they were anything unique, they seem like such an obvious dish

    Look SO yummy! All that gooey yummy melted cheese... which differs from Poutine in which the cheese curds are not melted. Big difference! Credited to the Tick Tock Diner in Clifton, NJ, probably in the 70's, they appear to actually have been from the 40s when they wouldn't have had the disco name. Many cultures, regions, and countries have variations... but no matter where they are from or what they are called... this version would be my ultimate choice! Little mountains of crispy fries, ooey gooey cheese, and luscious gravy!! Thank you, Chef, for showing me how to make crispy fries in my air fryer oven!!! Shirley in NH

    Oh my goodness, Rik! You’re talking to a Jersey girl, whose furtherest roots date back to the 1680’s when the family moved from New Amsterdam(now called New York City) to New Jersey.
    DH&I moved our family to southcentral Kentucky in 1988. This rural area reminds us of how northwestern NJ used to be when we were growing up. Our mothers were born on their respective family farms(dairy).
    It’s a nice area, but I miss having a diner not far from the house, and pizza from a mom&pop pizzeria that makes your taste buds get up and dance.
    BTW, disco fries came about during my lifetime. Definitely something that would have been featured on the menu of the typical New Jersey diner. I’ve never had them. They look interesting.

    My significant other, from Staten Island, NY (adjacent to NJ), would always order "french fries with brown gravy" when we went out to a diner. I lived further east, and had never heard of such a thing. It wasn't on the menu as such, but was just accommodated as a special request.

    Nice one Rik, I used to work in a chip shop in Lancs in the 80’s, we made the gravy so thick you could slice it. There’s nowt like proper northern gravy.

    Yowsa, Rik...looks like you've created quite a stir here. I live in Michigan, USA (have my whole life) and am of Dutch and German ancestry with a wee bit of Scot thrown in. All that to say I've never had poutine so I'm not entering the fray. This recipe looks delicious and I can't wait to try it. Who doesn't love chips, gravy & melted cheese? I certainly do.       Nearly an International incident - However now i have pinned the facts to the top of the thread most have shut up! I research everything I make and have made. I have been that way for 40 more years. Yes recipes differ around the globe and we all make them different - I have never in my career ever said "NO ITS NOT LIKE THAT" Those are the narrow minded folks that do not know how to cook. I never use the word authentic either. 100 cooks - cook the same recipe they all cook it different - so which one is authentic - I will leave that to the tubers wanting to con folks for views.     In north east England before the time of pizzas or kebabs, gravy and chips is all we'd eat after a night on the plonk. Still do them now for a quick snack when you fancy something tasty

    I was first introduced to the delights of chip 'n gravy in the early '80s when at college in Bolton, Lancs. where a guy ran a late-night burger van on the way back to my halls of residence. "Dust tha' want gravy on't chips, lad??" He also had the most delicious, individual cheese & onion pies!!!! 😋
    Never heard of kebabs back then.

    I was born in London in 1958. Fast forward 45 years and I'd moved to Macclesfield with my husband. He was born in 'the North' in 1957 and had moved to London in the 80s. I was horrified 😮 when we went to the local chippy for the first tine and he asked for chips with gravy!!!!!!!! Id never heard of such a thing. We now live in Marple Bridge and I'm still horrified when he comes home from the chippy with a little carton of gravy 😂 I'm strictly a salt and vinegar gal. 😊By the way, the chippy, The Town Street Fryer on Town Street, is fabulous. The fish is excellent and the pies are phenomenal. The chips are great, even without the gravy 😊

    In Las Vegas, the Hotel Bellagio has a place called Snacks that sells the best of this recipe. It's made with pulled pork in the gravy. I wish I could go back there just theirs.

      As a pastry chef I can say that bread without salt is in my opinion one of the two things the other being mashed potatoes,that are hard to make tasty without salt.I have faith in Rik,as he is an excellent chef,so he may indeed be able to do it.😊

    Thank you for all the techniques for making crisp fries from scratch in the air fryer unit. Straightforward when one knows how. The cornstarch coating before adding the seasonings will create the results I am looking for. Adaptable to potato wedges with a protein meal, seasonings from savory or spicy.

    Another blinder Rik, got home from the pub last night absolutely hank marvin. I made these, it took me a lot longer than it should have - nothing to do with the fact that I was a wee bit drunk. However, these were amazing and sorted me right out. Here's the method if anyone, like me, needs an idiots guide:
    CHIPS:
    1. Cut potatoes into chips, 1 tsp of Baking Soda into a bowl of water, add chips, soak for 6ish mins, rinse then pat dry with kitchen towel. Put in a food bag, add cornflour and shake to coat chips, then season with S & P).
    2. Cook chips on parchment paper lined tray in oven/airfryer (or just deep fry), coat with a bit of oil if not deep frying. Don't forget to turn chips halfway through cooking time.
    GRAVY:
    1. Melt 2 TBSP of butter in a pan.
    2. Add onions and soften, add S & P.
    3. Add 2 TBSP of flour and a pinch of Thyme, stir to cook down flour.
    4. Add the beef broth, stir and judge consistency and a little water if too thick.
    Once chips are ready, stack them in piles on parchment paper on a baking tray, add cheese, then add more chips on top of cheese, followed by more chips and finish off with more cheese on top. Stick in the oven to melt cheese.
    Put a layer of gravy on a plate, add a stack of chips on top, followed by more gravy.......tuck in and enjoy, because the diet starts tomorrow :)

    In my youth "Curry & Chips" from the chippy became a staple ..... it was cheaper than Fish-N-Chips..... (The Cod War and all that!) But it was nothing like a genuine Curry Sauce of course.
    But...oh----so much better than Chips-N-Gravy which was so bland....they couldn't even chuck a few onions in! Pretty awful, to be honest.
    The weird thing was....this curry was delivered in powder form to the chippies... they added water....boiled it up... Voila! Curry sauce.... and it was delicious on chips. Amazing.
    I make a chicken curry quite regular now...always enough for two days....first day with rice...second day with chips (Not Fries)(CHIPS!) Always better for the overnight "maturing".
    The spice mixtures vary..... so I cannot say which variety it most resembles .... Not Madras, Not Vindaloo, it's just as near as I can buy here as possible.😕😟😥
    To be honest, it is much milder than the Curry Powders available in the UK....where you can elect your own "level" of ferocity! (I'm sure someone will correct that statement)

    Oh, Rik! Chips and gravy are a fabulous combination....but cheese with the gravy?! Now why would I want to do that to my lovely gravy?     Huh! I only ever poured my gravy on top to melt the cheese, never put a pile of it on bottom. And I never added cheddar, only mozzarella. I need to ask my husband (actually from NJ and loved the diners there) if I’ve actually been doing it wrong (I mean, it can’t be that wrong, it’s delicious 😆) or if you’ve just got an alternate way. Maybe I need to try your way for the fun of it! 😁
    But yeah man, disco fries are just The Best Thing.

    These look incredible. When i was at university, the canteen served 'slap chips' (Afrikaans for fries) and gravy. It spoiled me for fries ever since. These might just be the thing that makes me a chips fan again. Yum.

    Fires and gravy were popular in the US in the early 1970s. This is very similar to the Canadian Poutine.

    Love this, and TY... but I have a Q, since you mix in the bag(s) anyway...after you season, couldn't you just dump a bit of oil in the bag & shakey-shakey some more? Just seemed like I'd have less mess that way, yes? Seriously, not a criticism, just wanted to know if you just were not shown to do that way - went on auto-cook, or if there's a reason to not do that way.

    Could you make a Tandoori dish maybe lamb or chicken drumsticks or both cooked in Ghee
    I would love to see your ingredients and Method and nan bread and poppadoms then a few ice-cold Cobra's or Tiger's
