  • An introduction to the canning equipment I use in Australia and where I have been able to find it. Especially during the recent canning equipment shortage.
    For Aussie's unfamiliar with 'canning' as a term, this is 'preserving in jars' using waterbath, steam or pressure canning methods.

    switched to forjars lids a while ago (I'm in the states) no fails - many people have switched and you can order in large bulk

      btw I use the plastic lids to store dry goods (we can get mason jars very easy- even the Goodwills (thrift store has them all the time- but no lids ) there are plastic lids that are cheaper than the ball. they have a separate gasket - these seal the best I have found-

      I'm continuing to have great sucess with them too since buying them. I'm actually wishing we bought more when we did, as the shipping has changed through Forjars direct to Australia. And through Amazon is doable but much more expensive now. It would be incredible to have access like you guys in the US to them, as they are great.

    I've only got a small collection of Ball jars so far, so once I move I need to have a big buy up. I'm thinking I'm going to mostly go for Weck jars as then you don't have to use a new lid each time so it's less wasteful. I'll keep some Ball jars on hand and maybe some Kilner jars too (and will buy some forjars lids for them), but I think I'll mostly use the Wecks. I am intending to use them for pressure canning. Ozfarmer state that the Tulip and Mold range are rated for pressure canning. Less of those will fit in the canner at a time though so if I have a big batch of something I might grab mason jars. I haven't decided which I'll go with. The tulips are so beautiful, but the molds are stackable when empty so that's going to be so practical. I'll see what I decide when it's time to order. I suspect tulips might win out.

      I never seem to get a clear answer on Weck and pressure canning. It seems to be one of those topics of debate. But there are definitely people that do. I am greatful that I started canning so long back that I haveca decent about of Balls, so use them.
      But I do love my Weck jars and use them for waterbath and steam. They are gorgeous.

    Just found your channel, very happy! i use the fowlers for waterbathing, as they're available secondhand, and were available direct, the rubber seals are easily sourced as well as clips, lids etc, although jars direct are becoming harder to buy direct from fowlers.
    I use kilner jars, ball when i can find them for pressure canning, and also bought my pressure canner direct from US via amazon.
    I dehydrate a lot though, especially jerky, cured meats as well as fruit and veg in season and also excess eggs- less weight, less bulk in storage as they're vac sealed in bags after conditioning in jars for a while.
    Pickling is another bulk preserving method i use- have just done another batch of eggs ( they are boiled eggs, not raw) as we finished the last crock over christmas- i do 30 or so a batch and have safely eaten them 10 months later, for those interested, they are fridge pickles, NOT shelf storage.

      I have been researching Fowlers recently and joined the Facebook group of users after I saw an amazing 2nd hand deal on them in Marketplace. But I wasn't sure if they were good for steam canning. Got some wonderful advice, confirming they can be. But sadly they were snapped up already. But Im keeping an eye out for the next good deal 😀

    Wonky jar issues.
    ● The glass is thinner, that's why pressure canning with them is iffy. That's not just the off-brand.
    Here in USA, Classico pasta sauce bought rights to DESIGN their jars like Mason jars>>faux canning jar! Only water-bath or steam.
    And the regular manufacturers, seem to have thrown out quality control requirements.
    Mason jar 2-pc lids, found some with the lip folded UNDER!, I was ticked!.

      We are what I call 'belly motivated' around here 🤣. So many of the things I love stem from enjoying good food...gardening, preserving, cooking...even foraging and fishing.
      If you are a gardener, learning to can is a great way to extend the eating for when things are lean.

    🇦🇺I bought my presto from Ball Mason Australia. At first I bought jars from Lehman’s in the USA but now I buy my jars from Aussie Mason in Victoria. I’ve just ordered 6 flat’s of 12 wide mouth Pint jars, with postage $258.61

      I heard about Lehman's about 6 momths ago and placed an order before Xmas. Sadly they cancelled it and then sent me an email that they arent posting to Australia anymore.
      Missed my opportunity 😞
      Aussie Mason is where I got all my original jars. They are very helpful there too.

    Great video! I love my presto 23q canner but I am desperate to get one of the presto digital canners as well! It would be so handy for smaller batches & you can set and forget..
    I’ve put in a request for my KK to buy me an Amazon voucher 🤣 as I’ll be buying it straight from the US as you mentioned you did too.. they’re not in Australia yet.
    Re jars, I PC in Fowlers Vacola jars, they work great. And heaps of people PC in normal lug lid jars with zero failures. So you certainly don’t have to pay a lot for jars. All my FV ones are op shop second hand. Some 100 years old, but going strong!

      I really should have mentioned Fowlers jars. Although I don't have any myself, they are an excellent Aussie jar.
      If you go the electric canner, I recently put up a post on a US canning group I am part of. The resounding response was that the Presto electric is the go. But there was question on voiding warrenty if brought to Australia and a converter used. It has me on the fence on an electric one, especially with the huge cost to get one here. And they also reinforced that it would be for small canning batches only. I would LOVE to hear how yours goes if you do get one here. As they do look incredibly good. 😍

      @@Bush_Edge_Homesteading_Aus yeah I know it would be taking a punt with the warranty but others have said they work fine using a step down converter, as they sell them here - 1500w ones for US to AU appliance conversions. I’ll let you know if the KK presents get me over the line 😆

      There seems to be better sucess with the local delivery. I have had good experience with the lukes of Weck jars from Ozfarmer, which are packed really well. From the US seems to get a rough ride though.

    Hey, love to see more Australian content! Just a quick question, i noticed you have the just nuts peanut butter glass jar sitting empty on the shelf. I love this peanut butter and the jars but have not yet found somewhere to buy lug lids for these. Do you have a supplier?

      With all my second hand jars, I am just using the lids that came with them. These ones I mainly use when taking stuff to our local swap group or giving to someone. And for immediate use/fridge storage. I know some people have done so, but I use the Ball, Kerr and Weck jars for canning.

    1 liter and half liter is available at Kmart they work in my pressure canner and replacement lids are available . And are abut the best price , you buy in lots of three . 7:49

    Couple of questions
    1. Do you have website links to the products you use And talk about in your videos? Eg steam canner? May I suggest Some pinned links to products you’ve trialed and use 🥰
    2. I bought a 23litre (I think) presto second hand with no manual, don’t think it was ever used. How do I tell if it’s a stainless steel bottom or not? Or if the bottom is warped?
    I’m s**t scared of starting lol wish their were hands on classes in my state.

      My goodness, I wish there had been classes too. The only ones I found at the time were Meagans ones from www.foodpreserving.org/?m=1 but WA was a bit far.
      Will look to drop in some links. Definitely a good idea.
      With 2nd hand canners, Im not aware of any way to get them checked out. US Definitely has it better than us, as I understand even there extensions help with checks.

    Have you tried the Fowler jars ? I mostly use Ball and Aussie Mason but had many many Fowlers jars but didnt use them a great deal because i just couldnt get it right then my husband bought me the proper unit now i really like using them and you can pick them up easy enough on market place .

      It's probably completely un-Australian of me, but I haven't used Fowlers. There are some amazing 2nd hand bargains as you say. I have recently joined a Fowlers preserving Facebook group to learn more about them myself.

      @@Bush_Edge_Homesteading_Aus I had mine in storage for a very long time , we bought most of ours in a variety of places around QLD so of course most were filthy , my husband has only managed to talk me into using our dish washer ( I refused to use it lol ) anyway he said lets just do one load and see how they turn out WELL im convinced and we now do one load a day :) , i will still wash again before i use them , i love the many sizes you can get , i do fruits , pickles , jams and syrups in mine and save the Ball jars for Meats , I am also in the Fowlers groups , you can never stop learning

    I can a fair amount of meat using the Aussie mason jars, and l find they have a great seal and l have not had any problems with them over the last few years.

      I was just watching your fermenting sodas and l have a little trick. If you put a balloon on the top of the fermenting soda it lets gas off and blows the balloon instead of exploding and no need to burp until it's ready.

    Hi there,
    I was wondering if you might know where we can get the gauges checked in Australia? I have the presto canner and was told that the gauge style canners must be checked before use and every year after. The canning instructor who told me this was American and she said that they get them tested at a university extension.. I have no idea of the Australian equivalent. Thanks

      Hi Justine, sadly I haven't come across anywhere in Aus that does. As such a better bet here is using the weights, so you dont need to rely on the gauge.

    Rachel I noticed your Presto is stored without the pressure valve. Is there a reason you take it off?

      I only take it off outside canning season, so Im not bumping it around. It is on there at the moment though.

    Does the Pesto maintain a core temperature of 240F ?

      Temp isnt monitored whilst waterbath or pressure canning, as it is about time of processing at a boil or at pressure. As such, I cannot comment specifically of the temperature achieved. Presto does have a spec sheet on their website where they do have a technical sheet for further info. Hope this helps 😀

      Great video, thank you! I dehydrate foods, but don't do canning ... (*yet* she whispers). Certainly agree that jars and lids used to be easier to find. I prefer straight, wide-mouth jars. Just ordered some from Kitchenware, but have ordered from America in the past. I use Shipito, a freight-forwarding company in Oregon. Useful for US vendors who don't want to ship overseas.

      @@CeciliaL2011 Thats a great tip. Those 3rd party services seem to be the way to bypass some of the restrictions with suppliers not wanting to sell to Australia as well 😀 Something I need to investigate more myself.

    The USDA has gone in for unnecessary procedures and rules. In Australia, many of us grew up with Vacola and similar ideas to this lady: th-cam.com/video/bhaDO80bYg4/w-d-xo.html I like quality glass from Germany/Austria, hence Weck/Rex seems the way to go - from Ozfarmer

      The slow sterilisation of vacola is another method, differing to the methods I personally use that I ran through. But there is lots of good info around. Since this vid I have now purchased some 2nd hand Fowlers jars, but from my discussion in the Fowlers Users Facebook group, I can use these with my waterbath and steam canners. I will gravitate to the steam canner, though, for my high acid foods, as it is just so incredibly quick and easy to pull out and quickly preserve some jars.

    Just want you to know be careful if buying lids from Amazon apparently some are fake cheap lids from China, Nyssa from our small footprint use the steam canner if you don't follow her she is awesome

      Very good advice to be very aware of buying lids online. There are some that are clearly Chinese no name brands. But worse, some pretending to be good brands like Ball.
      The Forjars ones I am using are direct from Forjars themselves.
      And yes, I have found Nyssa... but only recently and subscribed. It is great to see other Aussies doing similar things and get different ideas :) Sadly YT makes it easy to find US content but Aussies haven't popped up in my feed as readily.

      @@Bush_Edge_Homesteading_Aus I find that to I do follow some Americans but I'd prefer to watch fellow Aussies, another good channel is moat cottage homestead, huttons Valley Permaculture, there are some more but I've drawn a blank anyway love your channel too 😉
