This is so helpful, John! I've tried making my own oven-baken chips many times from a variety of recipes, and they never came out right - always either soggy, or overcooked, or even a combination of the two! I finally gave up trying on my own about 20 years ago - but tonight, I'm going to try your recipe. The cornstarch is just brilliant: I'd never have thought of it, but I can see how and I think I undertand why it works. That’s not a chip butty, that’s a chip sandwich. Difference is a butty is a single piece of bread folded, a sandwich is 2 pieces of bread separated by the chips. Butt is the same root as something that is pushed against an end, so it’s an end folded,
I have tried and failed many times at making air fryer chips by trying so many methods. Once again you came through on what is the gold standard after trying your method and it came out amazing. The only thing I swapped out was the sunflower oil for chicken lard I extracted from the chicken skins. This will be added to my collection of air fried recipes.

Looks good! Here is another tip. If using good clean potatoes do not discard the peels. Give the peels a light coating of oil, sprinkle your favourite spice combo on, place on a tray and pop into the oven until crispy. Trust me, you will do it again!

Adding cornflour is a new one on me, I will try that. I par boil the chips for about 4 to 5 minutes before air frying which makes them soft because I don't like them overly crispy

Always an instructive pleasure, John . I think you’ve just persuaded this Luddite home cook to invest in an air fryer . I’d given up triple cooking chips by deep frying as my tiny kitchen ends up soaked in oil . Going to have a kitchen re-fit soon so an air fryer along with the halogen should help me whilst I wait for the next oven to be installed. Cheers mate

thank you john, I couldnt quite get them right in the air fryer as we grew up with the old on the stove chip pan, I dont like using those now and have been itching for the classic chip butty with a little skoosh of tomato sauce, or a "piece and chips" as we call it up north, you have made a man very happy this day

That is a lovely recipe. I do not have an airfryer with a temperature adjustment ( It's an old beastie). I do find, however, rather than using oil, Ghee ( vegetable ghee in my case) gives a better crispness to the chips. I do use the same quantities as you recommend . My time for cooking the chips in my airfryer is 45minutes.

Whatever you want to call it, the chips have to be on buttered white bread or roll (never brown) with plenty of salt and vinegar. Remember, these chips are chunkier than French fries and have good texture and flavour. Try it - I promise you once you've had one you'll always want one! Introduce it to your American friends, and enjoy.

I have cooked chips in my Ninja from raw potatoes and it's very successful, though a bit more faffing about than grabbing a bag of chips from the freezer. I also find Maris Piper/Peer to be supremely good for chips. However, I have not tried adding cornflour yet, so that will be my next experiment.

Adding cornflour is a new one on me, I will try that. I par boil the chips for about 4 to 5 minutes before air frying which makes them soft because I don't like them overly crispy

Always an instructive pleasure, John . I think you’ve just persuaded this Luddite home cook to invest in an air fryer . I’d given up triple cooking chips by deep frying as my tiny kitchen ends up soaked in oil . Going to have a kitchen re-fit soon so an air fryer along with the halogen should help me whilst I wait for the next oven to be installed. Cheers mate

thank you john, I couldnt quite get them right in the air fryer as we grew up with the old on the stove chip pan, I dont like using those now and have been itching for the classic chip butty with a little skoosh of tomato sauce, or a "piece and chips" as we call it up north, you have made a man very happy this day

That is a lovely recipe. I do not have an airfryer with a temperature adjustment ( It's an old beastie). I do find, however, rather than using oil, Ghee ( vegetable ghee in my case) gives a better crispness to the chips. I do use the same quantities as you recommend . My time for cooking the chips in my airfryer is 45minutes.

Whatever you want to call it, the chips have to be on buttered white bread or roll (never brown) with plenty of salt and vinegar. Remember, these chips are chunkier than French fries and have good texture and flavour. Try it - I promise you once you've had one you'll always want one! Introduce it to your American friends, and enjoy.

I have cooked chips in my Ninja from raw potatoes and it's very successful, though a bit more faffing about than grabbing a bag of chips from the freezer. I also find Maris Piper/Peer to be supremely good for chips. However, I have not tried adding cornflour yet, so that will be my next experiment.
