For additional rising, use 1 T apple cider vinegar, stirred into the almond milk. It makes a kind of buttermilk that reacts with the baking soda. We never use salt, so for the salt in the cake batter, substitute Ener-G baking soda substitute, which again assists with rising. So made the cake just now. It's truly unbelievable! So tasty! And guess what, I completely forgot to add the dates to the cake, but it came out just fine. I guess the bananas were really ripe and the pineapple was quite sweet too. But the icing on the cake has to be the frosting! Pun fully intended! My daughter couldn't believe that it didn't come out of a Betty crocker tin! You are doing such an amazing job for all of us who are doing plant based nutrition. A huge big thank you! This cake is delicious. I made it twice already for birthdays. I suggest double checking the dates are pitted before throwing them in the blender and soaking the dates for the frosting. Also allowing the pecans to brown really enhances the flavor of the frosting. I also doubled the lemon juice for the amazing frosting and made lemon rind sprinkles. Thank you very much for sharing!

OMG I have obsessed over Hummingbird Cake for 30 years....lol. It is the feature so often in my southern magazines and books. I still have my Southern Living Cookbook where the Hummingbird Cake is the main feature of a Southern garden party. I found it to be an expensive cake to make. But this is like a gold mine what you've done ♥️ To have such pure ingredients and natural sugars is such a game changer. I will be making this cake next week for our desserts! And I've already written it down on a recipe card to go in my recipe box. Yes...lol...I actually still keep a physical recipe box in my kitchen. I keep my best loved and often used recipes in it....so my children will always have them also. I know this is behind the times of digital but it's nice to have the recipe in my box. Thank you!!

Just FYI for anyone who is concerned about GI. Once you blend up dates to nothing, the GI is really high. It is not as if you were eating a whole date, where the GI is much lower. Same with nut butters and pastes and smoothies.

Recipe and preparation summary: 3 tbsp of flaxseed meal mix with 6 tbsp of water 3,5 cups of rolled oats turn into 3 cups of oat flour in blender, put in a bowl. Add 1 tsp of baking soda, 1.5 tsp of cinnamon, 0.5 tsp salt. Mix, set aside. Take another bowl. Add 4 bananas (2 cups), mash with potato masher. Add 1 cup of crushed pinapple chunks. Mix, set aside. Prepare liquid ingredients: To a blender add 2 cups of pitted dates, 2 cups of almond milk, 2 tsp of vanilla. Blend. Add wet ingredients and flax egg to flour mix. Slightly mix it with a wooden spoon, don't overmix! Add fruit mixture, stir. Add 1.5 cup of toasted walnuts, and leave another 0.5 cups of walnuts for decoration. Lightly fold walnuts in. Divide visually dough onto 3 parts and fill in 3 cake forms. Smooth it around, put to oven for 35 min, 180°C.(350 F). Frosting: 2 cups of soaked for 4 hours cashews throw in a blender, add juice of 1 small lemon, 1/2 cup of dates, 1 tsp of vanilla, a sprinkle of salt, 1/2 of water + 2 tbsp of water if necessary for blending. Blend into smooth paste. Spread about 1/2 cup of frosting on top of cakes, leaving enough for top frosting. Decorate with walnuts.

If I could add pics to this comment ,you'd see it came out so beautiful and it was 😋. I made it 2 days ago, it's so filling. But I made a big mistake, I used halawi dates for the frosting and I thought they were already pitted. As it was blending I heard that clanking sound but I thought maybe it was from one mistakenly unpitted date. And I have a ninja high speed blender so it broke up all the pits. I have to eat it slowly and carefully otherwise I'll hurt my teeth. If anyone wants to try this, Don't FORGET TO MAKE SURE YOUR DATES ARE PITTED! AND ENJOY!!! :)
Bonjour Jill! You forgot to mention you pitted the dates, I assume they are 😁 My oat flour is homemade too, I never understand why anyone would buy it (nor flax meal for that matter 😄)... I do buy chickpea flour though,the results were not satisfactory when I tried making it. This cake looks fantastically delicious! I make a banana-pineapple flapjack (no butter of course) that is a great hit among my family and colleagues, it’s a perfect combo. Have you ever tried a white sweet potato frosting? It’s delicious, and low in fat, I prefer it to cashew frosting. I even made it with plain potatoes (much cheaper) and it was still delicious ! My oat flour is homemade too, I never understand why anyone would buy it (nor flax meal for that matter 😄)... I do buy chickpea flour though,the results were not satisfactory when I tried making it.
This cake looks fantastically delicious! I make a banana-pineapple flapjack (no butter of course) that is a great hit among my family and colleagues, it’s a perfect combo.
Have you ever tried a white sweet potato frosting? It’s delicious, and low in fat, I prefer it to cashew frosting. I even made it with plain potatoes (much cheaper) and it was still delicious ! I’d love to have your take on that 😊

I haven’t tried making frosting with sweet potatoes but it sounds wonderful 👍
