    For purely health reasons, globally everyone should eat rye-bread.

      I've made my own last week and it was very good.
      I have a little grain mill so I ground the rye berries (and got 3 C of flour = 500 g).
      Then I added 1 1/4 C (200 g) all purpose flour, 1 tsp of sourdough powder for rye that I found in a shop and 1 tsp of normal dry yeast. I mixed it with 2 C of lukewarm water and let it rise for almost 3 hours.
      Some cumin can be added as well.
      Finally, I added 1 1/2 tsp of salt and lined a steel pot with parchment paper.
      First I baked it with the lid on top in the oven at 400°f/230° C. Then I took off the lid after half an hour and kept baking it for another half hour. It was beautiful and really fine tasting.

      About your ryebread obsession: go to suomikauppa.fi and ryebread, hapankorppu, salty candy, Aura sinappi is all there. The prices are ok. Have you shopped there? 🙂

      @@sandracarli1110 Real finnish rye bread does not contain any yeast, the rye sourdough is made through fermentation.

    Fun fact about the meaning of the name Runeberg, the famous finnish poet of the past.
    Rune means a rune, a viking, maybe norvegian, mystical tattoo or drawing of sorts, which you use to do spiritual stuff like cast away unwanted spirits or boost your happiness or something. I don't know much about runes really, but they've been a thing in Norvegian culture for a good time I think.
    And Berg means mountain.
    So, Runeberg is this mystical mountain that brings you spiritual happiness and good times.

      Also, if you Rachael or anyone reading this, are interested in REAL finnish top level cuisine, Helsinki might have things, I don't know, restaurants. But, once I visited the city of Rovaniemi in Lapland, northern Finland, and found a finnish restaurant there. That restaurant had the best food I've tasted to this day, and I've been a real culinarian eating real high-quality nice foods, not just pizza kebab but things like high-end sushi, best meats you can get on the market, Kimchi, Kombucha, you name it. I'll taste kobe beef this year I think, and go to Gordon Ramsay restaurant one day in this lifetime.
      But yeah, go to Rovaniemi and find that finnish authentic restaurant if you're interested! The appetizer there cost like 15 euros and it was... the very best of the best ever. Stinging nettle sauce with some carefully chosen vegetables made by a very skilled chef, who'd make my cooking skills look like a retard trying to solve quantum physics theories.

      @@WildwoodVagabond, you'll need to make two kinds of laskiaispulla: with jam AND with almond. Otherwise, you'll split your Finnish fanbase into two warring factions. This is a serious debate in our country.

    Magic of ruisleipä is leivän juuri. A root of bread literally. One takes some tasty ryebread and puts it in new dough. Dough gets sour in time and that's what makes our ruisleipä so tasty.

      Ps. Easiest way is to get some old leivän juuri from someone willing to give and add that to new batch of dough. No yeast is needed to make real ruisleipä

    I just love kardemum pulla. And I love that the whole house smells of pulla when they are made. You should make a video when you are making pulla and when you serve them to your friends. :)

    I am so happy I discovered your channel today! I also lived in Finland but quite awhile ago. I went as an AFS student when I was 17 in 1984. It was just a summer program so I was only there a few months in a small village called Kyyjarvi but we did quite a bit of travel in Finland as well as in Norway, Sweden, and Denmark. I missed pulla for years and then found some recipes online and now make it more regularly. I also remember loving their strawberry tortes with whipped cream, Fazer chocolate bars/Marabou, and cucumber and cheese sandwiches for breakfast.
    In your video with the 10 things which were culture shocks, you mentioned how quiet/shy people are and that no one would bother women on the street. I hope its changed but when I was there, I often encountered really drunk men on the streets and they would act very inappropriately as far as touching without consent. It seemed like they were making up for being so reserved without alcohol.
    I look forward to watching more of your videos and would be interested in your Finnish language class. I didn't become very fluent and it has been decades since I spoke Finnish but I would love to go back and know a little more Finnish.

      Kyyjärvi still is small place in half way from Kokkola to Jyväskylä. I´m originaly from Kokkola but live in one of the largest city Tampere these days.

    Basic pulla is not that hard to make at all! Google "pullataikina" and you get plenty of good recipes! I'm sure that your Finnish is good enough to understand them even though they are written in Finnish. 😊 There are plenty of recipes for vegan pulla (vegaaninen pulla) as well, but personally I have never tried those.
    Thanks for a lovely video! I'm a huge fan of ruisleipä, karjalanpiirakka and salmiakki my self. I really don't know how I could live without them! 🥰😋 Lumilapio! ❤😁

    The age and quality of dough root is essential in making good rye bread. Maybe that is the reason for the taste.

    Have you tryed "Jälkiuuni" ryebread, maybe that from suomikauppa. Originally made because of long stocktime.

    Ah, yes Karelian Pies, I recall making those once upon a time with my late great aunt.
    She would turn in her grave to hear we are not allowed to call them that since we were technically in Savonia, rest her bones.
    But on a more positive note it finally dropped below zero here, it has been t-shirt weather all week, it's weird I tells ya....
    Let us not be discouraged by this, be well.

    Rye party, rice or potato based filling. If you didn’t try potato filled Karbala noodles pastries, you’ve missed something. I’m a Brit who lived 34 years in Finland. Like you I miss it loads! Did you know that salmon soup and rye/ rusi bread is a wedding menu in some places

    Sometimes Finnish American clubs sell pulla, but those may be harder to find in other states.... I'm in Michigan, so there's a big Finnish population.

    Rachel - have you tried any meals in Finland made from or with CURD? My most favourite baltic meals made with this dairy product. Not sure if you can find curd in Texas? I am sure is widely used in Europe. P.s. Love rye bread too!

    I can still remember some mornings in my grandparents house when my grandma woke everybody up and said: "A mie tuossa piirakat pyöräytin" (I just baked some pasties). She had woken up before everyone else and had done her magic in the kitchen. Later my aunt used to make some barley pasties especially for me. And as Karelians we don't call them karjalanpiirakka but simply piirakka or piiras. The Karjala part seems redundant.

    I think there is a market for real Finnish jälkiuunileipä in America. It is kind of rye bread with a Finnish twist, best with butter and mild cheese as topping let's say cheddar is good.

    I have never really liked Maksalaatikko(liver casserole) as a main dish and I like it better cold.
    I have tried, but I don't want to eat a box or even half the box unless it's on the side, but I still think it's really good.

    The first vaccines will be given early next year and life should be normal by summer. At least in here, it probably takes longer in bigger countries. Kämp Hotel in Helsinki has the best lohikeitto, afterwards you can go to Fazer Cafe for pulla and candy.

    Hey Rachel, a few thoughts:
    1) Most of rye bread sold in Finland contains a varying amount of wheat (not that I'm complaining). The real hardcore rye bread is heavenly if you get it still warm, pretty much straight from the oven - otherwise it can be a bit dry and hard to chew.
    2) Did you ever try hapankorppu, a crisp bread made from rye sourdough? That is truly dangerous, addictive stuff. You think you're just gonna have a couple for a snack and end up wolfing down a dozen. Ooh, I feel a craving now and don't have any left in my cupboard.
    3) I share your feelings about maksalaatikko. What kind of evil person invented a dish like that - and then added slimy raisins. Shudder.

      Raisins are only good thing about maksalaatikko. Never liked that one either.
      Hapankorppu is great. I just rather put mustard on it and spred it than butter or margarine as usualy people do.

    Didn't you taste kalakukko,lanttukukko,lihakukko at all ? I newer enjoyed "swedish turnip" before i eated IT inside lanttukukko at My motherinlaw. Could eat that only for ever! ( With Finnish real butter on top )and piimää palanpäälle

    I am a Finn and I love those foods too, expect mämmi, which is horrible. Ok, mämmi is good with enough sugar and cream, but whatever is good with sugar and cream. :)

    Karjalanpiirakka with egg and ham or chicken or salmon or anything salty. That's what I ate an hour ago, chicken this time. I like liver "box", but not mämmi, it's ok but I can do withour, same thing about pasha at Easter time. Samon soup, or samon in any form is my favorite. Salmiakkilaku is good, but I can do without salmiakki. I love dark chocolate with cold milk. But I don't like milk chocolate. Does that make any sense?
    Right now I am in The Helsinki Culture House. Steve'n'Seagulls concert is going to start in 20 minutes. I love them, the nicest of people. Saw them this summer at Allas Sea Pool. It was great. Got to talk to them for quite some time.
    All gatherings with more than 20 people are forbidden for the next three weeks, starting on Monday. So no concerts. Due to COVID-19 of course. The number of infections has gone up lately in Helsinki region. All in all we are doing quite well compared to many other countries.

I Love how you had a few different kinds of salmiakki in the candy section. 😄 .... I really love their chocolate... I had some with (I think it was call sea berries or something?).. It was salted, sweet, had the bite of dark chocolate, and the little berries had a pleasant tartness to them.

      Not all salmiakki have gelatin, the chewy gummy ones will. But there is also hard ones and pure salmiakki powder.

      Iltasanomat, luin sen, ja laitoin linkin Raksulle, juttu oli muokattu vanhasta ja siinä oli linkkejä vielä vanhempiin juttuihin..

    Ohh.. north areas of USA has HUGE areas of finnish way to live and still speaking finn and food and still tradidions and sauna and juhannus.. and all.. near canada border.. even willages names is just as finn.. and all familiy names is.. and if you really like or love traditonal rye bread.. (no joke) them realy do know how to do it.. that is area of USA to be.. if you like to be finn.. and them sing in fiin and use finn instuments.. That is NO bs.. those wood states.. and small willages in USA and still can use english and SUV.. because all othres do it also..

      @@WildwoodVagabond Siksi juuri kirjoitan niin. Minulla on paljon sukulaisia siellä, mm. siskoni Dallasissa. Kirjoitan serkuillekin aina suomea, koska sieltä katsottuna se tuntuu hyvälle ja kielemme säilyy. Serkut monesti kirjoittaa minulle englanniksi ja minä taas suomeksi :D

    Candies from The bulk section are off limits today, or they should Be! So many viruses spread through there when people are taking candies on their filthy hands! Sneezing on top of open candy boxes.. spitting there.. throwing candies on The floor and putting then back to The box 😤🤒🤮

    Feel you. My boys love maksalaatikko, but I hate it. My theory is that the raisins ruin it. I absolutely love grapefruits but I can't stand raisins.
