There's extensive-ass research and doctors put into this stuff for the reason that it is, in fact, a very complex situation.
The reason they dont believe in gravity is to get around the fact that on a flat earth, gravity would pull you lighter and at an angle the further away from the center you get.
Not just that, but a flat earth shape would be literally impossible if gravity was real, because the reason earth is a globe is because gravity pulls things to its center. Flat-Earthers forget that the opposite of buoyancy IS gravity, and one cant exist without the other. Buoyancy is an "upward" force and gravity is a "downward" force (wherever down may be when standing on a globe).

Gravity would actually work far differently on a flat earth. With the center of the earth's gravity being at the center of a disc shape, everything on the earth would feel gravitated on a slope towards the center.
