Big project, but surely worth the time and effort (not to mention the cost) in the end. It's nice that you are doing it "in total" as opposed to slap-dash. I look forward to seeing the completed shop!
I think a small simple workbench is always really handy, but you don't want to feel too cluttered, so make sure you have the space. Maybe mock something up once the garage is cleared and live with it for a month or so. Really looking forward to seeing the workshop develop
