What challenges would be held by making a bigger version of the X1C or a version of the X1C with 2 tool heads. Also I love y’alls printers and wish I had the money to get one

depends on if the second head is meant to be primed while the first head is printing. Probably pretty difficult if thats what you are going for but it would be amazing.
