    great instructional video. as mentioned already, some suggestions would be:
    1: rock sugar for subtle sweetness for the broth instead of sugar or MSG (eck!)
    2: for a richer meatier broth, also add in some oxtails
    3: season broth with salt; fish sauce muddles the broth. Save fish sauce for seasoning at the table when eating
    4: herbs (cinnamon, anise, etc) bag goes in only the last hour of cooking.
    5: slice your own meat for the "tai" portion. you should rinse your meat to avoid any impurities left from the market slicing.

      Adding the spices at the end makes a lot of sense. First time i tried making it i put in the spices at the start and the broth turned into tea before any of the fat had been dissolved.

      so do we put it at the end after it simmers for hours or let it simmer for hours then add the bag?

      @@onelife7188 depends on how long your cook time is. So if you plan on cooking for 6 hours like I do, bones for 4 hours and add the spices for 2 hours. If you like the floral flavoring, then add an additional hour. Don't forget to remove the onion at about the 2-3 hour mark as it usually starts to disintegrate by then and makes it hard to remove later.

      @@8jaime8 yeah I know it's safe and I wasn't saying you shouldn't use it. It's a personal preference for me since it leaves my palate bitter and dry like I'm parched. To each their own.

    I grew up in the Beacon Hill neighborhood in Seattle. We lived near the Pho place on Jackson Street and Boren Ave. I now live in Cartagena de Indias, Colombia. I want to thank you very much for this recipe because I will sure make it tomorrow. It's been about ten years since I last had a steaming bowl of pho and I am determined to end the dry spell. Thanks for all your efforts and patience to make this incredible video. I also want to thank you for letting everyone know the name of the spices in the comment area. I was never fond of the meat balls, but I used to get the tendon and round steak, both of which I should be able to get at the market over here. Thanks again.

    anyone new to pho id recommend changing two things with this recipe: dont add the flavor pack until the last hour of stewing. and secondly, dont add the fish sauce at all. cooking with fish sauce would destroy the fresh beef flavor you've been making. just add a little of it into your own bowl, at the very end, along with hoison sauce and lime juice. this way all the flavors complement each other instead of blend.

      voradora the fish sauce somehow make the broth muddy and have a sour aftertaste. Cant tell you why, just from my personal experience.

    Hello, Iam going to make your pho recipe tonight but instead I am using chicken, I actually liked your recipe over all the others because you let the broth sit overnight to make infuse a better taste. So I plan to do so tonight. I am little nervous but I have faith.

    The recipe looks good. I make pho all the time and the only different is that I don't put that much fish sauce. The amount you put in your pho will make the broth way way too salty. I recommend to those who plan on following this recipe, just put in 2-3 table spoon, but much later in the cooking process. I normally add the fish sauce in about an hour before the broth is done. Just my thought.

    Suggestion : cook bone and oxtails first , cook 2 hours get all oxtails out then continue cook bones more 2 hrs then get all bones out. After that you put onions, gingers and the bag of season's go in the pot cook with low heat, cook 30 minutes more then add seasoning ,
    1 gallon water with 30 grams of salt, 56 grams of sugar and 30 grams of soup base beef flavor or 150 ml beef liquid base, I use " knorr brand , professional liquid concentrate beef flavor base.. No MSG , Continue to cook more 15 minutes then turn off the heat. Hope it helpful.

    This was so fun to watch. I had to comment!
    I made pho the "official" way last month and it came out great. I too was up in the am making my pho(however i had it on super low the whole like 10hrs i made it haha i wasnt sure when to stop! I kept making changes haha)
    i wanna try the onion thinggy! And the sauce combo...i love sriracha! Sligtly obsessed haha
    I guess the only difference was i cut my ginger, used one spice bag, used additional broth, used eye of round and no fish sauce cuz i only seen the big bottles and since i had a backpack i wasnt tryna tip over walking ahaha
    It looked so good 🍲

    For the oil sitting on top just lay paper towels one at a time on top quickly, it will absorb most of the oil and that's with most dishes.

    I started dating a woman who was from Japan back in 2010. We're not together anymore, but DAMN, am I glad that we dated for a few years! She herself wasn't much of a cook, she said she didn't like cooking so she never really learned. Which I found really disheartening, because OH MY GOD could her family cook!!! Especially her Aunt Rosita. Her name isn't Rosita but she said it was really hard to say it in English, so everyone called her Rosita. I called her Angel because she was my food 😇!!! I'm a Caucasian American who grew up in middle America. Kind of the boonies, some would call it the sticks or redneck country. Growing up where and how I did, we didn't have a huge diversity of food or culture for that matter. 😇 turned me onto all different kinds of dishes, and I'm so thankful. Some of the best food I've had in my life. My ex-girlfriends brother ended up marrying a woman who was from Puerto Rico. This is just my experience but these 2 families became 1 family, a very close nit one. Family seems to be very important. I don't want it to seem like I'm trying to speak for all Asian or Spanish families because that would be asinine of me. But these 2 families really did become one... Oh my god, oh my god, OH MY GOD! when they got together and started making food!!! Ya hear "Asian fusion cuisine" all the time, BUT, and this is a BIG BUTT, BUTT they actually started fusing their dishes 2gether. It became these beautiful Spanish and Asian dishes. I am no longer with my ex, and she doesn't know this, but I still go hang out with her Aunt Rosita once or twice a month. I'll take her out for some food or a drink, or she'll cook for me. She's also been teaching me over the last 2yrs or so... Sorry Hana....

      I read most of the flavor from ginger comes from the skin, but I don't have any first hand experience, never really cook with ginger.

    Emily I'm doing this today, but I have a quick question. My neighbor is from Vietnam and she made this for us one day and she knew I was making this today and she brought me something that looks like dried prunes or raisins. What is it exactly? She doesn't speak English very well 😢 so I'm not sure in when to add them. Hopefully you can help me out. I love the way you explain everything 👍🏼😊

      sounds like she gave you some cardamom pods, it's one of the spices used to season the pho broth

    Hmmm my mother in law said never to use fish sauce it makes the broth dark but rock sugar and salt is a must. It's pho Bo not pho fish. Fish sauce is put on the side for taste and dip.

    I make my broth a few days before I need it, and I store it in the fridge so ALL of the fat comes to the top.
