A trick to get a really lemony loaf is to make a syrup of lemon juice and a little sweetener. Use a skewer to poke holes in the lemon loaf when it is done and still in the pan, and pour the syrup over the warm loaf. Leave it to cool completely before adding your icing and slicing to serve.

That's a lot of lemons! Did you know that you can freeze whole lemons? As long as you will be cooking, rather than simply slicing, them, just toss the whole lemons in the freezer. Defrost in the fridge for a day or two, use as you normally would.

I have sweet memories of lemon pound cake. My grandmother ALWAYS had a lemon poundcake on a cake platter in case someone dropped by, she’d offer a slice with a cup of coffee or glass of iced tea. When she passed, I inherited that cake platter and since I don’t eat that stuff anymore, I don’t use it. That was early 70’s when neighbors and friends would pop in. If you remove some of the almond flour and add coconut flour it makes for a better texture. Depending on how much coconut flour, you will have to add a bit more liquid to the cake recipe. Because coconut flour absorbs liquid.
I’ve seen a 3:1 substitution ratio in plenty of recipes (and tested them myself mostly in mug cake form), so 1 1/2 cups of almond flour can be replaced with 1/2 cup of coconut flour.
I'd leave the recipe alone and add some lemon extract. Not more juice. Look for other recipes for lemon loaf and see the difference. It's rare you see a loaf using just coconut flour. The liquid would have to be increased but time.
While the loaf is hot mix a tablespoon of sweetener with 2 tablespoons of lemon juice poke holes in the top with a skewer and pour / drizzle over the top. That will make it like Madeira and you will get a better hit of lemon😊 thankyou for your recipes I love them❤

I made peanut butter cookies using ChatGPT and asked it to use cottage cheese and PBFit and make it low calorie. They turned out cakey, not dense like peanut butter cookies. I'm going to have to allow more fat in them to get a traditional peanut butter cookie. Your loaf looks wonderful!
This looks so good! The Ketogenic woman makes a lemon egg loaf (which is like cheesecake) and it uses those real lemon packets to keep the moisture and carbs down. Perhaps adding some of those to this recipe will help to bump up the lemon flavour. I recently discovered Victoria's Keto Flour and I'm looking for more low carb/keto recipes using that. I saw someone made biscuits with it and they looked good and less than 1 net carb each. So if you are looking for ideas, perhaps trying to keto-ify some of your old favourite recipes using that flour. That would help me with ideas on using the flour as well. Regarding Lemon Flavor. I have made a copycat Lemon Loaf that is spot on for Starbucks. It calls for 2 Tablespoons of lemon zest and 1-2 Tablespoons (not teaspoons) of Lemon Extract.
