    😱Omg!😱 I understand why you don't like making fondant😂😅😂 I tried it today and it was a mess! I had fondant coming out of my wazu and although I greased my hands, bowls, hooks, work space the goo got all over everything! Would I make it again? Yes, I would.

      Right?! It's a love / hate relationship. I really get annoyed when I have to make it because I know I will have to wipe the entire kitchen down top to bottom. But it's worth it in the end!

    I cant even tell you how exciting it is that i can try fondant!
    I have Celiac Disease, so no gluten, cross comtamination - and can't do rice...and it seems like all commerical brands have one of those.
    We are trying this in the next 10 mins. Cant wait 😁

    Thank you , I am definitely going to try this ! In the UK corn syrup is less easy to purchase in stores so I am hoping liquid glucose will work the same 🤞

    I'm very surprised that you don't flavor it at all. I'm a hobbyist so I don't either, but if I were selling, I would use some combination of butter flavor, vanilla, cream bouquet, & salt. It tastes incredible. I've even experimented with actual butter & vanilla...the absolute best!

      Wouldn't flavoured fondant potentially clash with the cake and buttercream icing flavour? Would you have to use the same flavour for both?

      Thank you! I keep it wrapped in plastic wrap and sealed in an airtight container at room temperature. It lasts 2-3 weeks like that. I use so much of it that I don't ever keep it longer than 3 weeks. I have heard that some people will refrigerate it or freeze it up to 2 months. But I never did that myself, so I'm not sure what effect (if any) it has on the fondant.

    Great video as always Karolyn. I am new at this and my question is, how do you clean the fondant after you've rolled it? It gets "dirty" from the corn starch, etc. Is there a quick fix? Thank you!!

      Corn starch doesn't make it dirty, it can dry it out a little bit. I can only use fondant a handful of times before I have to toss it. But if your work area is clean, the fondant will be clean too!

      I think she meant removing the excess corn starch... a small somewhat fluffy paint brush to dust it off, or I have seen her use crisco to help remove it.

    Thanks for sharing! What would you do if your fondant doesn't stretch. It just kinda breaks apart when you try ro stretch it? Is it recoverable?

I think I may not have described my scenario well. Basically what happened with my fondant is that when I tried to stretch it, it IMMEDIATELY tore, like there was no stretch to it at all. Think of it making almost a snapping sound when I tried to stretch it...does that make sense? Do I still add tylose? Is it recoverable?

      You can keep it wrapped up and stored in an airtight container for up to 2 weeks. After that, I recommend freezing it up to 2 months!

      Hi Aranka! Sounds like you added too much powdered sugar to the mixture. You can try to add some liquid to it, I would put it in the microwave to soften it and put it back in the bowl with the dough hook attachment and add a little bit of water. Also, the tylose powder will help if you have it. You may have to start again with another batch if that doesn't work.

      Turned out perfect!! Made the best of my day off and made another batch of your buttercream and the fondant. I normally don't cover my cakes in fondant, only use it to make fondant decorations, but i think that's about to change. 😊 thanks again for sharing!

      I usually make it the day before. If I had to use the same day, I would let it sit (wrapped up) for about 2 hours before I used it.

      Thank you Susie! Yes, I do it all the time. I always add a little Tylose or CMC powder to the fondant. It helps stiffen it up and makes it easier to work with.

      Sure, it's approx. 450 grams marshmallows and 907 grams powdered sugar.

      When I cover a cake with fondant, I only add a little bit of Tylose (about 1 tsp per 2 pounds) so it doesn't dry rock hard.

      Yes you can! I've added vanilla before. I usually mix it into the melted marshmallows before I add it to the powdered sugar.

      You need to try it a few times to get it right! The amount of liquid you add will all depend on the humidity and how much sugar is absorbed. It gets easier with practice, I promise!

    Do you use this to cover cakes? If so, do you add the Tylose powder? It seems too stretchy to use to cover cakes. Satin ice is much more firm but with give to it.

      I do cover cakes with this and, yes, I do add a little tylose powder to it. It helps to smooth it out!

      I make it at least the day before I need it. But if you need it soon, I'd wait like 2 hours for it to settle. That should be enough time.

    Does this marshmallow fondant not dry out as fast as regular pre-made fondant? I’m a novice and have been using the one from the box but I feel like it dries out so quickly and when I add shortening it really doesn’t remove the cracks. Any help would be greatly appreciated! I love your videos.

      It definitely doesn't dry out as fast as the ones I've bought in a box.
      Just make sure you keep it wrapped up and in an airtight container!

      I've never made my own. But it definitely looks to be alot softer and more pliable compared to storebought ones. I also feel like it doesn't work when you add shortening to store-bought. It also seems to stretch out easier. Seems like when you make your own it's alot easier to work with. Lol. Have you ever made your own since your comment was 2 years ago?

      I keep it wrapped in plastic, then in a plastic ziplock bag, and store that at room temperature in an airtight container.

      You really need something with a dough hook attachment.
      I've also seen people do it by hand (pour sugar onto countertop and add the melted marshmallow on top and knead it together), but that creates a big mess!

      I usually don't refrigerate unused fondant. I keep it at room temperature in a ziplock bag, and store that in an airtight container. It's usually good up to 2 weeks. You can freeze it up to 3 months if you'd prefer! To thaw, keep it wrapped up in the ziplock bag and leave at room temperature overnight.

      I usually add it before I roll it out. You have to wait (usually around 15-20 minutes) after you add it so it can work its magic.
      It's basically the same thing as CMC, I believe CMC is stronger so you don't need as much. But I've never personally used CMC, so that is just what I've heard,

      Yes, if you add a lot of coloring, it affects the consistency. Did you add it to the marshmallows before you added that to the sugar? Or did you add it after you made white fondant?
      If you add the coloring to the marshmallows, you can just add a little more powdered sugar until you get it mixing to the right consistency.
      If you add a lot of color to white fondant, then I would add tylose powder to it to help it stiffen up a bit.

      I have once before, I can't even remember what for. It wasn't bad, but the chocolate can get soft / warm from working with it. I'm just so used to using marshmallow fondant and I'm really good at it, so that's what I stick with!

    I made this fondant and it was delicious. However, it was extremely sticky. I couldn’t smooth the fondant without it sticking to the fondant smoother. How could I fix that? Also, how do I get the fondant to firm after covering a cake? My fondant never firmed as it set at room temperature (covered).

    I will try fondant! Well try again that is. After making a cake for a birthday party,, I had a request for a graduation cake,.
    First thing that popped in my head was fondant covered cake to look like a graduation cap. So I was interested we she asked for a cake to look like a hat.
    So here is my question... For a say 3-4 layer barrel cake, to look like a graduation cap, how much would you charge?

      Yes you can use Glucose to sub for the corn syrup. I live in a very hot and humid country and glucose is the better choice for me in the consistency of my MMF as opposed to corn syrup where it gets very tacky .

      You definitely can! I used to add vanilla, but I found that it's not really necessary (for me). But if you want it to have a flavor, add 1/2 - 1 tsp flavoring to the melted marshmallow mixture before you add it to the sugar.

      Ok Karolyn....certainly not the most fun thing I’ve ever done. Hard on the mixer and cleanup is “challenging”, but it is much more cost effective. Looking forward to tasting. First batch came out pretty soft, but second batch (dyed red) was much more firm. Neither batch ended with the fondant attaching to the dough hook....that worries me a bit.

      You really need Tylose powder, CMC powder, Gum Tex powder. I don't believe that there are substitutes for these. If you can't find any, then you may be able to mix some fondant with some premade gumpaste. But I haven't done that, so I'm not 100% sure if that will work!

      Oh no! Probably too much sugar / not enough liquid. The amount of liquid added will vary depending on how humid it is outside. In the dry Winter months, I add more liquid, in the Summer, I add less.

      I do 12 oz. marshmallows
      approx. 1 tbsp. light corn syrup
      Melt in microwave.
      Sift 2 pounds powdered sugar.
      Add half to the bowl, then pour the marshmallows over the sugar, then add a little more sugar on top.
      Mix with dough hook. Add more sugar or water until it wraps around the dough hook.

    How long would you say you are kneeding the fondant before it is good? I know you speed up and cut some of your videos down so they are not too long, but is it 2 minutes. 5 minutes, 10 minutes, can you kneed it too much?

      After I take it out of the bowl? I knead it for about 30 seconds before I wrap it up to settle. You can knead it too much because air can get trapped forming air bubbles during kneading. So you have to be mindful of that!

      There are no perishable ingredients in the fondant, so it doesn't have to be stored in the fridge. I use so much that it doesn't last me more than 3 weeks, but I'm sure if you wrap it up in plastic wrap really well and keep it in an airtight container that it could last upwards of 3 months!
