  • Garlic scapes are one of the culinary world's best-kept secrets, offering a unique, mild garlic flavor that can transform a variety of dishes. These curly, vibrant green shoots are the flower stems of the garlic plant, harvested before they bloom. By harvesting garlic scapes in late spring or early summer, typically in June, you not only get a delicious ingredient but also promote better bulb growth for your garlic crop. Cutting the scapes redirects the plant's energy back into the bulb, ensuring larger and more robust garlic cloves come harvest time.
If you're lucky enough to have a supply of garlic scapes, you're in for a treat. These versatile greens can be used in numerous creative ways, adding a fresh, garlicky punch to your meals. In this blog post, we'll explore five exciting methods to incorporate garlic scapes into your cooking: from pesto and stir-fries to pickling and grilling, these ideas will help you make the most of this seasonal delicacy. Let's dive into these flavorful recipes and tips that will elevate your culinary repertoire.

Gardening is a life skill. All these folks that think that they can just buy a "seed vault" and start gardening after SHTF are in for a rude (and hungry) awakening.
This is my first year with a real garden outside in the dirt. I've lived in apartments most of my adult life and did some container gardening, but gardening outdoors is really different. The radishes went from teeny tiny to overgrown and woody in the blink of an eye, the few radishes we managed to get were so hot they were painful to eat (and woody). The beets are languishing, the eggplant seems ok-ish but still pretty small. The peas are trying their best but we'll be lucky if we get peas this year. The herb garden (in pots) is doing relatively good so at least that's a positive. The apple trees are looking good and full of baby apples. The trees were unkempt and a hot mess when we moved in last summer, so we tidied them up and gave them TLC but didn't expect from them last autumn. It looks like the apples will be doing well this year. The pear tree is nearly totally blocked from the sun by a seriously overground bay laurel (bay leaf tree). I'd really like to take that tree down but it's too big for me to do on my own, also there's a family of pigeons in there and I don't want to evict them while they are raising baby pigeons.

Thanks for sharing. I've been growing for many years now but the first couple of years are the times you learn the most, and are disappointed the most too! Every plant has its habit and its preferences. Getting to know your veggies is so important. Learning how to look after them, which need more water than others, which need more 'food' than others, and thousands of other considerations. You are always learning. There's never a better time than to start your growing journey than now; not next week, or next year.

In case you have not heard, archeologists just unearthed several bottles of perfectly intact preserves of cherries at George Washington's home. They are undergoing analysis to see how 'viable' they are. They were found in pits and believed to be perfectly preserved. They must have left the pits (no pun intended) in the cherries because they hope to germinate the cherries (that should be interesting).

Yes! I printed out the article about this from the Mt. Vernon website and put it in between the pages of my copy of Martha Washington's Booke of Cookery and Booke of Sweetmeats, right at the spot where the four recipes for preserving cherries are. It would be pretty awesome if they can figure out which of those recipes of Martha's was used for preserving this particular batch!

Yes, they do get flowers which produce seeds. I saved the seeds last year and planted them in my garden beds this year. If they develop a bulb, it won't be this year as a pest deterrent. I noticed they just keep growing back year after year.

Very few varieties produced true seed. You have to remove the bulbils which you are probably calling seeds in order to achieve this. If indeed, you do have a variety that you have no problem getting from the plant and actually getting them to sprout then you should join the Tru seed, garlic initiative. However, it’s very apparent to me that you’re just collecting bulbils.

Ooo, I like the idea of the side dish! My scapes are just now starting to pop up (it's a variety of garlic that produces little topset clusters of tiny bulblets instead of flowers, kind of like Egyptian onions - I believe it's called "Old Homestead" or something similar). Will have to try the side dish! The bulblets are way too small to try to use like regular garlic (at least for an impatient person like me), but they, and the stalks too tough to chop up easily, add lots of flavor when tossed into the stockpot with the bones and other "makings". If I'm cooking the stock for a long time, I generally wait until the last couple hours before adding the scape stalks and bulblets, so they don't overcook.

When growing garlic there is softneck (no garlic scapes) and hardneck (scapes - yum) types. Hardnecks typically do better in northern climates and those of us south tend to plant softnecks. Although I have had good luck with some hardneck varieties.

The scape/EVOO paste can also be frozen in small 'pucks' (using a small cookie scoop makes this easy), then double-baggie the frozen scape-pucks and store in freezer. Very convenient!

I just got done using my food processor to blend up my onion greens tonight, the three trays just made it into the dehydrator, just like Leisa did with the garlic scapes. My husband even said his eyes are burning, Leisa is a wise woman to suggest moving your dehydrator to the garage for this process.

Ohhhh you have to try garlic chicken wings. Spread a baking dish with a layer of scapes then a layer of wings. Add a bit of salt and smoked paprika and then another layer of the scapes. Cover tight with foil and bake at 250 for about 4 to 6 hours. This time of year you can do it during the night while you sleep, lowering the temp to about 200 just in case. You can also do this in a crock pot and they always taste great. I love adding a bit of honey when cooking in the crock pot.

I had heard of them, but didn't know what they were. About 10 years+ ago I pulled a full city garbage can full so my garlic would get bigger. After I went to the gardeners market where, lo and behold they were being sold 3/$1.00. The seller didn't know what to do with them. A customer , who was Oriental was looking at me like I had just grown a 3rd eye when she
heard me say I just threw out several bushels of them. I asked her what to do with them. She gave me many uses and said what you don't do with them is throw them out. I've been charishing them ever since

Froze most of it along with the rest of the scapes chopped up to have handy whenever I want to add to a recipe. In the south we can only grow soft neck garlic varieties and elephant garlic which unfortunately do not produce scapes.

Why do you use soft butter? Since it's in the blender and the blender adds heat, wouldn't refrigerated, solid butter work just as well if not better?

      To blend, soft is easier

      Water them?
But seriously, you can do it. Look up on youtube the best way to plant, when to plant for your zone, etc.

@@SuttonsDaze I water but I guess not enough. Oh this year something is eating the stems of my onions. It's funny everyone has trouble growing green peppers. I am located in CT so the weather is not the best for peppers, me I have the best pepper crop every year. But the easy stuff well, just cannot do it. And that is how my life goes.. LOL

Garlic scapes are fibrous. I tried sautéing them but they didn’t really soften enough to be food.

It’s an old wives tale that you have to remove them to get bigger bulbs. it’s only relevant to commercial growers. You’re only gaining a small percentage of weight 10% or less which is nothing to a home gardener.
