Gosh I miss watching this man so much. I had commented before that I was going to go to Connecticut from Florida just to eat at his restaurant and then covid happened. I'm not sure if it was Jack himself who would comment back but it surely was written in a way that I could imagine him saying it and I was thrilled when he would respond to my comments. He gave me advice on how to flip things in the pan without using a spatula. He was a master of flipping eggs without breaking them. I had great admiration for him when he would mention the mom and pop sandwich shops or meat shops in the community. What a man. I love the blues and I love cooking and food. I love real authentic people. Naturally, Jack checked all the boxes. It's rare in life when you feel like you know someone who you've never met and Jack was one of the rare ones for myself and tens of thousands of others. What you saw is what you got with this great man. I wish his daughters and family all the best.

Yeah, DJ got his videos started with him however, not the best video guy in town. Always pointed the camera on Jack while his hands and cooking action were always out of the frame. Never understood that...Most folks want to see what he is doing with the knife, the pot of stew, the oven, getting a spoonful of flour etc. There's plenty of opportunity to do a full frame fact shot of DJ when he's not in action at the stove or prep stations.

Could you do a video on food safety? How long to keep foods? In this video you said that you made the chicken stock earlier in the week. How long does that last? how is it best to store it? should I refrigerate it or freeze it etc? And how do you keep track? Do you label with a date? How long do leftovers last in the fridge generally 3, 4, 5 days? Your experience really takes the mystique out of so many untruths. Thanks for the great videos

Stock or soup as long as you boil it up every 4 or 5 days will last a long time. To keep food fresh a lot depends how cold the fridge is. Hope That works, Jack.
