    Indonesian cuisine can be as simple as blanched vegetables with some sauce or as complicated as cooked for 72 hours with 50 different ingredients.

      Yeah agree with this, we can just wash some veg's ,chopped it , and added sambal on top of it and it's called 'lalapan' and added peanut sauce on top of it then we called pecel or gado2,

      Maybe i'm just exaggerating, but some dishes require a lot of spices.
      Some ingredients is common in one area but not in others, so maybe you're just looking in the wrong place. Even the same dish can vary in different city, like "sayur asem" or maybe we can call it "tamarind soup" in english, can have different vegetables in it even tough they share the same basic spices.

    Gado Gado is sold for IDR 10k as street food but high-end salad store here renamed it as 'Indonesian Peanut Sauce Salad' with exactly the same ingredients and people queued for IDR 150k 😂

      In javanese, that motive generally called "blirik" and we basically have a pretty decent complete kitchen and table stuffs in that motive e.g mug, saucer, plate.

    For me the best Gado-Gado peanut sauce is when you mix Red-skin Peanut and Cashew.. after that blend it together with Chillies (i prefer Spicier), Garlic and the rest of ingredients.

    this is the correct way to make gado-gado, i came here after watched jamie olive cook gado-gado with wrong way
    and also always use fried peanuts to make all kind of peanut sauce in indonesian food. like batagor, gado-gado, pecel etc.

    If you can find some chayote, boil it until it's kind of soft but still crispy, the julienne it and add it to your Gado2. Boiled corn kernels are great too. If Gado2 is your thing, search up for kredok, pecel, and ketoprak too.

      The original sauce is using crushed boil potato and coconut milk mixed with crushed peanut and seasoning. Cooked until it's boiling.. the texture is smooth.

      Yeah let's toss durian for spaghetti sauce and stinky bean for pizza topping. How about that?
      Don't you dare using your European or American standard for authentic Asian foods. Cause for some of us, foods is sacred.
      When you change one or two ingredients and how you cooked, you can get different food. Like gado² is similar with pecel. One blanched and the other raw. With similar sauce but different veggies. And this video right here using green bean for it which is part of pecel not gado². At least use something like morning glory or cabbage then you gtg.

I had the opportunity to travel around the globe and from southeast Asia the best "food" will always be vietnamese (it could be from the north, south, coast, mountains, cities, country side) and you know what they all have in common... Heavily influence by French cooking... And most "authentic" asian food is heavily influence by ingredients from other part of the world, and I'm going to give an example... Every chili you use comes from south america, every tomato you use comes from south america and you know how the came to Asia, via trade with Europe, may I also ass the cabbages just like you suggested come from Europe.... You sir are just a bitter ignorant. Plus you have an anime pic as a profile, so I can't really have any respect for you.

      The problem is, she ruin the texture and authenticity. Even if she can't find the original ingredients you can find something with similar texture. But broccoli and green beans isn't one of them. Call me purist if you want, but i just tell you the truth. Cause in Indonesia, even though the food have similar ingredients but if how the way they cooked, served is different and where the food come from can change their name.

      Add with crushed boiled potato and coconut milk, keep stiring it even it's boiled. That's the original gado2 sauce recipe..the texture is smooth and delicious.

    You can replace peanuts with almonds or cashew nuts. I do it all the time when I can't find fresh peanuts. If I may suggest, don't use plain water to mix your peanut paste, but mix it a bit with a piece of tamarind or a tea spoon of lime juice.

      The core of Gado-gado is the sauce. Using different kind peanut will affect the taste.
      You can substitute the veggies, but not the peanut & kecap manis.

    Chili and garlic in peanut sauce it's for other recipe : we called it KETOPRAK ( keh thow prack) gado gado just simply with chili and peanut with tamarind , baked shrimp paste, palm sugar ( gula Jawa/gula malaka) a bit of salt..and water that just it

    Well you've done the right way with mortar and pestle don't switch to blender the end result is different. The tastiest gado2 is the traditional one and sold by street vendor, I've never tasted tasty gado2 in luxury restaurant or hotel in Indonesia.

    Lontong, lettuce, cucumber, mung beans sprouts, carrot, fried tempe, fried tofu, boiled eggs, and the crackers are much smaller than you use in your video.

    we dont usually use brocolli but i guess you can mix any kind of veggie in there,as long as you par boil/blache it in hot water for a while. what makes it gado gado is the peanut sauce.

    Seemingly, you make a typical Betawi Gado-Gado. If Gado-Gado Surabaya usually has coconut milk in the peanut sauce. It gives a different taste in the sauce.

    Gado gado is using coconut milk in the process of making it. While what you're making feels more like "Pecel" sauce but with sweet soy sauce a.k.a kecap manis. More like satay but the spice you put in a.k.a garlic, cloves, corriander, are just too simple. 😂 Lol. I dunno what have u made.... But, well done anyway. Actually there is an instant gado gado sauce. And u can afford it online. And if you say that dish will transform your kitchen to Indonesia. As someone who can cook, I just... 😂😂😂😂 Oh God, I lost my words.😂

    You can also add fried red onion as topping. This fried red onion topping is also "Indonesian thing". Lots of Indonesian dishes have fried red onion topping on them like gado-gado, fried rice, sate, bakso, soto etc.

    for better taste on Peanut Sauce.
    Fry the peanut Dry (no oil) -> Indonesian call it 'Sangrai'.
    Remove / peel off the skin before grind
    Tremendous work needed... But it is worth the taste 😚

    I think the peanuts is over cooked. It doesnt looks like golden peanut. That will make the peanuts sambal a little bitter. I'm Indonesian. And I just want to give a little trick for Gado-gado peanuts sambal.     Just ate it for the lunch, made by a 60 years old grandma that already making gado gado for 30 years, and she’s not using blender, she crashes it until the peanut getting soft. Try it traditional way, taste better.

    Just switch peanut with cashew (or mix them both). You'll get much better dressing 😉

      The ultimate part of this Gado-gado is the peanut sauce. If you change the peanut with other nuts, it wouldn't be Gado-gado anymore.

    Gado gado approved, i know maybe its hard to find ingredient to cook proper gado gado in Indonesian ways. And its really really recommended to grind your peanuts by hand cause it will give you amazing crunchy texture to your sauce

    Regardless of other suggestions for a more "classic" gado2, keep in mind that gado2 literally means "mixed random stuff" so yeah, everything goes! Love this recipe

    There is no garlic in original gado-gado peanut sauce, if u put garlic in it its called ketoprak peanut sauce

    idk if ppl find it weird but i always put kaffir lime leafs for my salad food like this one gado2, ketoprak/pecel. I'm just used to it
