    Tamarind " PuLi " is the fruit of a tall tropical tree, a fava beannshaped pod filled with a fruity, orange-brown, sweet-sour pulp. The fruit takes its name from the Arabic words tamr hindi, literally "Indian date." Actually, tamarind tastes more like prune than date-prune mixed with lime juice and a drop of liquid smoke.Tamarind is a summer crop in villages in India. The villagers know the art of plucking ,preserving , packing tamarind and using the black seeds also for various summer games.In those days It was a more fascinating game as interesting as the video games on computer of today.mummy and her team [ friends, aunts ,daughters, ] all sit on "Arival manai" [ a sharp dagger],remove the seeds from this fruit with a nack without cutting her fingers and piling up the unseeded on bamboo plates for drying .3 kgs of Tamarind would yield upto 500 nos of Puliyan kottai.The bamboo plates filled with the fruit were dried in the hot sun for one day and then packed in mud pots so tight and sealed .These packed and tamarind because of the heat generated inside turns from orange to black over a period.The blackened ones has more pungency and sourness and are are very good for making Sambar, Rasam the favorite south indian dish
