    Tried it yesterday: used ginger instead of Dong and put 2 green onions in belly. Taste en result was wonderful; really simple recipe 👍🏽👍🏽

    My Father in Law Danny Sam (God Rest Him) Made Rock Salt Chicken. I remember it took him a couple days. As best we can recall, he totally covered the Chicken in Rock salt. He even put it under the skin. Then Baked it in one of those Blue and white oblong Pans with a lid. Like we used to cook Hams in back when. Buried in Rock Salt. I swear that was the best Chicken I ever had. We cannot find a recipe and sadly Danny suffered from dementia for years so I never had the foresight to learn it from him. Cheers.       Ahhh yes ! I am familiar with that as that's how we do it in the older days. Some vendors still does this today but it's very limited. This is a short cut version which taste pretty good too. Thanks for sharing 😊

    It's yummy I remember when I'm working before in Hongkong ,. (Hamkai) salted chicken taste good .

      lowcarbrecipeideas The thighs were wonderfully juicy and tender! So glad you shared this cooking method! I will have to try it with other meat. I don't like dong quai so I just used salt and pepper. Yum! Thanks again for sharing

      Sorry I forgot to weigh the chicken but I think its around 1.5 to 1.8 kg. It's better to salt generously then undersalt thanks 😊

    Is it needed to wrap with aluminum foil? If its for steaming?

      Yes as it helps to seal in the natural juices and flavor. It also makes the chicken more moist and tender.

      @@maribelmontero5360 You can follow my steam chicken video which is 20 mins high heat, 20 mins low heat then turn off heat and leave it covered for 10 mins. This is a fail proof method. Do let me know how it turns out 😊

    I look around in Market and groceries to buy bake paper but they don't, instead use that,can I use aluminium voil????

      It's actually parchment paper which you can get from baking ingredient shops or supermarkets. Yes you can use aluminum foil too

      Yes you can steam the chicken too. But do maintain the wrap with foil before steaming

    I marinated overnight, then baked for 60 minutes at 200C. Came out uncooked.

      Perhaps your chicken is bigger in which case it just needs to cook longer

      If the chicken came out from the fridge try to rest it in room temperature for half an hour before you cook it ...otherwise the inside will take longer to cook as it is still very cold ... that’s my experience 😂..I tried this and it’s really nice 👍
