It looks delicious. We always saved onion trimmings and clean skin, carrot peelings and and celery trimmings along with roasted carcasses in the freezer until we had enough for stock-zero waste. My broth was always plain, no herbs, so I could use it for anything and the flavors didn't clash with a particular dish.

I've also become very good at not wasting, just because I've learned about the energy and resources needed to produce things. We tend to take it for granted these days!

Just because someone doesn't do the same as you doesn't make them lazy. People make choices. Someone could say the same about you for not changing your own oil, growing your own food, making your own laundry soap, anything they do from scratch that you don't. Calling strangers lazy for choosing where to devote their time and resources is kind of mean. Using any convenience food or service to feed and care for one's family shouldn't be a source of shame. They may be carrying a load that takes all of their time and energy. A little kindness and understanding goes a long way. Be well and Happy New Year.
No tomatoes for me. We also roast the veges the same as the chicken bones but shorter time, and deglaze the fond from the baking sheet. There was tons of flavor left on the sheet.
I watched a video where a lady used chicken feet and said they made the best broth. Looks creepy but she said the broth was fabulous, she used an instant pot and pressure cooked them.... ever heard of this?
The feet do make the broth flavorful and silky. I added them to roasted bones/carcass, I never used just the feet. I did cut the tips off and made sure they were well-trimmed and washed just for my own peace of mind. Yeah, it can look unsettling.
