  • Tindora fry:
    I made a batch of tindora fry. This is a vegetable I grew up eating. It looks like a little IVY gourd and tastes a little sweet and savory when cooked. I find this vegetable in Indian stores during summer.
    Ingredients:
    3.5 pounds tindora chopped
    1/2 tbsp salt
    2/3rd tsp turmeric
    1 tsp chili powder
    1 tsp cumin seeds
    3 tbsp olive oil
    Here is what I did:
    I took a pan and put it on the stove on medium heat
    I added 3 tbsp of olive oil and let the oil heat
    I added cumin seeds and let them sizzle
    I added chopped tindora and sautéed for 5-6 minutes until the tindora is coated with olive oil
    I took the tindora out into a microwave safe bowl and put it in the microwave oven for 12-13 minutes
    When done, I took it out of the microwave oven and let it sit for a minute
    I added the tindora back into the pan
    I sautéed for 3-4 minutes
    I added salt, turmeric and chili powder
    I sautéed for another 4-5 minutes
    Enjoy with rice or roti
