When my mom made her lemon pies with meringue, she just lined the bottom and side of the pie plate with whole vanilla wafers. She was a busy lady, mother, wife, teacher so she took shortcuts but it worked! They did get mushy over time because they weren’t baked like your pie crust. This looks so good and easy! I can’t wait to try it.

Lemon Icebox Pie is my favorite in the whole world hands down. I love anything Lemon and it don't matter what it is. I've even taken lemon juice n mixed with cool whip n eat it with vanilla wafers n hid it from my hubby n kids! Lol. It was my snack anytime I opened the fridge! Lolol. I was a sneaky lil Mama! LOL. I love your recipes and I’m a southern girl also. Reading the recipe you wrote place filling in pie crust (prebaked). I’m sure you meant after baked and cooled. Just don’t want new cooks to make mistake like my sister did. After getting married they moved to Colorado. She wanted to make a meringue pie and used cool whip for topping. She realized her mistake after putting it in oven to brown. 😃 We have laughed at that for years. Must say now she’s not only a great cook but makes beautiful quilts. Love the southern life.
My grandmother was from Georgia and she made this with graham cracker crust, 1/3 cup lemon juice, the cream cheese and eagle brand. Refrigerated it with cherry pie filling on top and we call it cheesecake. I make it too. So good.
Eagle brand sells it in a squeeze bottle. My sister loves the stuff, by the spoon, so I gave her one of her very own for Christmas last year. She loves it!

I’m making this for my family again today. Not only is this easy but it’s the best. I was Leary the vanilla wafer shell couldn’t compare to graham cracker crust but, was I wrong! This delicate crust compliments the lemon cream in a way you can’t imagine! If I remember correctly I made two pies from this!💛
