But you know the one thing that's missing from a crunchwrap? It could be bigger! In addition to making an XXL version, we're mixing up the filling and stuffing it with chicken fajitas - with bell peppers this crunchy, you won't even miss that unnecessary tostada shell.

    You'll Need:
    7 tortillas
    1 red bell pepper
    1 green bell pepper
    1 yellow bell pepper
    1 lb chicken breast
    1 red onion
    1 tsp paprika
    1 tsp cumin
    1 tsp cayenne pepper
    1 tsp salt
    ⅓ cup olive oil
    4 oz shredded monterey jack
    4 oz shredded cheddar
    1 bunch of scallions, sliced
    1 green chili pepper, sliced
    1 tomato, diced
    1 tbsp cilantro
    Extra:
    10.5" or 12" cast iron skillet
    Here's How:
    1. Preheat the oven to 400°F. Core the bell peppers and cut them into strips. Peel the onions and cut them into strips, as well as the chicken breasts. Put everything in a bowl, add paprika, salt, cayenne pepper, cumin, and olive oil and mix well.
    2. Pour the marinated chicken and vegetables into a casserole dish and cook for 15 minutes.
    3. Brush a cast iron skillet with olive oil and line it with 6 tortillas, as shown in the video. Sprinkle half of the cheddar and Monterey jack cheese over the tortilla in the middle of the pan.
    4. Spread the cooked chicken fajitas over the cheese.
    5. Add the diced tomatoes, scallions, chili pepper, and cilantro and sprinkle the remaining cheese on top.
    6. Place the last tortilla on top and fold the overlapping tortillas towards the middle of the pan. Put the skillet in the oven and cook at 350°F for 40 minutes.

    Just made this yesterday. I added more cheese and chicken. I didn't have a pan like they used, used a glassware to bake it in, still came out crispy. Really good.

    so after reading the reviews before started ... when I was ready to place the tortillas I warmed 5 up in the microwave for 30 seconds...they laid in the skillet just fine. I also didn't have chicken so I used 1.5 lbs hamburger and used the dry seasoning to it plus garlic powder...browned that and piled it in cheese, veggies, then meat then the rest of the veggies topped with the rest of the cheese etc... baked it 30 minutes (I have a hot oven)... turned it out on a plate .... my hubby loved it. Next time I'll be sure to have chicken.

    Just made it. The seven tortillas are to make sure it can be completely sealed. I did not notice that I had a small hole between the edges of two of the tortillas that caused some of the melted cheese filling to bubble out. That wasn’t an issue until I flipped it over. I let it sit for about 15 minutes but I couldn’t wait to try it. It makes a fantastic cheese sauce. I just cut my first piece from the open part and spread the cheese sauce that seeped out on top of the entire casserole. This was awesome! This is one of those recipes that you know is going to be even better a day or two later. I drained some salsa and used it instead of just diced tomatoes. Just be very careful to drain extra liquid from any ingredients you choose to add. I used a couple of bags of fajita vegetables that weren’t completely thawed when it started cooking. The extra liquid caused the filling to be a cheese sauce instead of a baked cheese filling. Also the extra liquid caused the bottom tortillas not to get quite as done in the allotted time.

      @Carrot Ferret - the same error that FAT people make, i.e. that eating fat makes you fat. That is the biggest fallacy that the food industry has perpetrated on us. It's the carbs, esp. sugars, that make you fat. These veggies are low in carbs, the chicken has none, and the cheese has the fat your body needs to loose weight. Just use low carb tortillas. The ones I buy have claim 15g carbs of which 10g are fiber, so not digestible. That's a grand total of 5 carbs. And when I eat out I simply tell the waiter not to bring any tortillas and just eat the filling. No rice, no refried beans.

      @@cdeer17 - OK, I'll be honest. 4 months into keto and I've gone from 188 to 167#. I limit my carbs to 25/day. Plenty of fat. I eat until I'm full at noon and evening. I feel great and do not miss sugar in the least.

      @@wilhelmtaylor9863 I lost over 80 pounds in 4 months with intermittent fasting. Just do that and cut out alcohol and you'll feel so much better.
      I couldn't believe how easy it was, since the most I'd ever lost was about 30 pounds over 3 months other ways.
      Stop eating at 8pm, don't eat the next day until midday (and not sugar or milk during that time either) and that was it.

    Hi guys! I tried this recipe just earlier tonight for dinner and O.M.G., this came out so so GOOD!!! I messed up on the amt for the spices (because I didn't read the amt prior to making it🙄) but now I know how to tweak it to make it less spicy.
    Definitely will be making this again for guests and future dinners!
    Update: (3 months later)
    This has become a STAPLE at my house; by now I have perfected this and even had to teach my neighbor on how to do it because she couldn't get enough of it!! Such an awesome dish!!!

    Just made this for dinner, & it was fantastic! My husband, who doesn’t like Mexican dishes, ate 2 helpings! I didn’t have a tomato, so I used half a can of stewed tomatoes, sort of drained. And since I had no cumin either, I used a packet of gluten free taco seasoning. I’ll definitely make this one again! Thanks!

      rob bivens Baked it 40 minutes. I went to he website to see how long to bake it. I didn’t turn mine upside down b/c it was rather juicy since I used the canned tomatoes.

    I made this yesterday. Way tastier than I thought it would be, and we all loved it! My tortillas were smaller than these, so I had to improvise a bit. Also skipped the cilantro because most of my family isn't a fan of that flavor.

      I'm of Colonial American decent. Not Mexican at all. I have a good opinion of them, the ones I've met are nice, hard working people. I live in Central Florida have for 45 years, of the 48 years in Florida. Moved down in 1974. I did live in Miami for 3 years, developed a taste for some Jewish soul food, and Spanish food from the islands, Cuban food, Puerto Rican food, a few South American countries too. See those nice people love to share food, “Never tried it before? Let me get you a plate.” kind of people. And most are great cooks, even the men.
      BTW I'm Mrs Boomer. And I know a despot when I see one. He might be a good business man, but he should not be allowed to speak in public, or correspond with foreign heads of countries. He needs a handler and a leash. He did get us cheap oil. But Bless his heart, he's touched in the head. He's getting old, we might get lucky... and he'll rest in peace.

      Madame, the reason for asking you all these strange is because we as Mexicans are by far the proudest most patriotic people for our country (NOT for our corrupt government) for our culture and of our ancient culture more so than any other nationality on Earth. Trust me our love for Mexico is like a religion for us, it is that extreme. However,..
      At the same time we are deeply ashamed and embarrassed of our centuries old corrupt Mexican government which is mostly responsible for all of Mexico's many problems such as our vast poverty, organized crime, and lack of good employment opportunities. This is why millions of Mexicans have migrated to the United States seeking a better life for our families and ourselves.
      Unfortunately the Mexican government is still too powerful to overthrow or change for now, but all the negative things about Mexico are for another time.
      As a result of our extreme patriotism we absolutely love whenever we see people for other countries that have any personal interests in our country, in our people or in our culture. In your personal case with our Mexican cuisine!!!

      I have a quick question, that white cheese from Mexico , I've seen it on many cooking shows. It's white and crumbly, is it made from cow's milk or goats milk. My mother and I were talking about it this morning, neither of us knows. And I didn't see it at Walmart when I looked for it awhile back. But supplies are still coming in slowly since the pandemic, many shelves are empty. I can't remember exactly what it's called, caso blanco or something simple like that. On the PBS cooking show “Patti's Mexican Table”, she uses it often, but doesn't give information about it.
      Taco Bell may not be a true representation of Mexican food, but for a lot of people it opens the door to different tastes. It's a beginning. That's where I fell in love with tacos back in 1976. Then burritos, refried beans, tortilla chips, and so on.
      By the way, your English writing is wonderful. I've been trying to learn basic Spanish for over 40 years, it's not happening. I speak just enough to work behind a cash register, and tell you the total in Spanish. I'll never be able to hold a conversation in Spanish. I don't even know all of the colors if someone asked for something in another color. But this is Florida, someone else will know.
      I'm glad you have pride in your culture. The Aztecs were once a great powerful race. And until your countrymen join forces to correct the government, nothing will change for the better. There's an old song from the 1960's, there's a line in it that goes “Freedom is just another word for nothing left to loose”. That seems to be true. It might take help from good honest God fearing church going people to band together to change the government. Because corruption is everywhere. But it has a big foothold in Mexico. And I'm sorry your country got this bad. During the American Revolution people were willing to die to get freedom for everyone else. During our civil war, people were willing to die to protect everyone else, and to fight the taxes imposed on Southern goods being sold to Europe. Sometimes you have to be willing to die to make things better for everyone. The people can stock pile supplies, and get ready. During the American Revolution, churches carried valuable information to it's people, and news of what to do. Maybe your churches can pass coded information to people to get ready to live free. But you need intelligent people ready to restructure the government, and create jobs right away or no one may follow the cause. Slowly band trustworthy honest people together. The world overthrew Hitler when he was bad. Mexico just needs to remember their Aztec blood. Start more Aztec heritage groups, play the old games, dress the old way for more festivals, have more festivals. Bring the pride to the front of everyday life. Remind people of who they really are Aztecs. Maybe that will help get your government to change. Best wishes and may God bless and protect you and your family. 👵✌️🖖 🌎☮️🕊️

      One more question, if you don't mind. I don't know any other Mexicans at this point in time to ask.
      Can you quickly explain Mexican wrestling? There's often 3 to 6 men in the ring at the same time and the referee doesn't stop it. In American wrestling it's only 2 men in at a time legally to the rules. My husband loves wrestling, we just can't figure out the rules, it's so different. But because the Mexican men weigh less, it's more acrobatic, and much more interesting. The masks are so creative too. If you don't mind, and it won't take you too long to explain the basic rules, I would so appreciate it.
      Oh another question, my husband often watches the Spanish TV stations. No he doesn't understand any Spanish, and they talk too fast for me to pick out some words to understand what is going on. We've noticed that mariachi bands often play music that sounds like German oompa music, and we wondered why. Are there that many Germans in Mexico that they influenced the music? It's beautiful music, but if I'm in another room, and only hear the music, it sounds like traditional German music. Walk in the room, and he's watching the Spanish station again.
      Sorry to bother you with so many questions, but it's been awhile since I've had any Mexicans to ask questions to. Especially any that speak English so well.

    Try this with croissants instead of tortillas. Arrange the triangles like a pinwheel. It's beautiful and delicious!

      Use the ones that come in the biscuit tube like Pillsbury or whatever preferred brand. They'll come in little triangles. In a baking pan or skillet, fan put the triangles of croissants dough to look like a pinwheel. Fill the middle like so, the fold the pinwheel ends over top. Simple
