I like using half mayo and half Miracle Whip. That takes care of the vinegary tang. It's just what my Mum always did, because she didn't like using straight vinegar...not sure why, lol. But it's really, really good. And sometimes she'd add white flaked tuna, or broken up hard-boiled eggs, or even both. For sure a comfort food, all year 'round. Shelley, Miracle Whip is basically Mayo with vinegar and sugar, aka Salad Dressing. Which is why many who substitute MW for Mayo without lightening up on the vinegar and sugar will complain about it being to vinegary.

Laura, I'm a southern cook from North Carolina and dearly love macaroni salad. One ingredient that almost always makes it's way in pasta or potatoe salad is Celery Seeds. It's a must in my house. Love your videos and have tried a lot of them. Keep making all that great food.
I always put hard boiled eggs, apple, celery, carrots, green pepper, onion, all chopped small. And sweet relish, mayonnaise, Miracle Whip and salt and pepper to taste. For color I sprinkle the top with paprika.

I like mine with sweet pickles/gherkins, celery, carrots, onion, fresh garlic, mayo and yellow mustard. But all mac salad is good! I will give this a try next time I cook out.
Just tried it today and it is fabulous! I replaced the red onion by green onions and added grated carrots and it was really good! Everybody loved it! 😊
I use pickled mixed veggies like giardiniera and a can of chunky tuna drained,hard boiled egg and ether ham 1/2 inch slice and diced or 1 or 2 hot dog diced mayo oil and vinegar to taste salt if needed.

I'd leave out the peppers, because I can't eat them. But your idea of putting in steamed carrots I'll try. Also my late mom added shrimp to her mac salad.

But If some ppl want this to be totaly healthy, you can sub the mayo to any type of yogurt (dairy/nut/soya...) and the the pasta to kinoa/califlower rice/vegetable noodles or even lentils or beans. I totally agree that this salads are the best for summer time ! and you can make with whatever you have in your kitchen and you like or you are allowed to eat !
That's literally how macaroni salad is made here. But more of the base, because you can go wherever from that recipe. We put chopped ham, grilled shrimp, lemon zest & juice, and a little bit of cheese. Others put raisins in theirs... I don't know why... lol just kidding.
Trevor Graham Welch the only version I’ve ever made of a fruit salad consists of cutting every type of fruit in my fridge (except for watermelons) and then make a lot of orange juice and mix them. Like a fruit soup. Adjust amount of juice to your liking :) it’s super good and refreshing.
I made some with tortellini...the small kind....it was fabulous! Also...I soak my onion in vinegar...5 minutes, then drain. It takes the bite out. I hate it when the onion is over by powering.

My Mom switched it up by using some apple cider vinegar, and adding kielbasa. I don't think she used mustard, but oh my goodness gracious, I am now wishing I had some.

I think that I prefer the macaroni a bit softer than 'al dente'... unless that's a relative term. I bought some macaroni salad at a deli the other day not having had it in years but the pasta was too firm, tasted floury and chalky. I threw it away. That's why I'm looking here. The macaroni salad that I remember from my youth was much softer, melted in your mouth with the dressing flavors allowed to come through better.
Valarie Albert that’s how my grandma does it! And she doesn’t add peppers, and only salt and black pepper. I can’t convince her to add anything else 😂😂😂
Hi I normally add some sugar, but never use vinegar so next time I will add vinegar and minus sugar and see if I like it....ps I always add sweet corn is that ok?

Hi Laura! Here in Brazil we put some shrered chicken, ham, corn, peas e mozzarella cheese, all cut in cubes. It's really good too =)

interesting-- I have never heard of adding kielbasa to macaroni salad. I do add kielbasa to my halushki though and it is fabulous

I prefer curly leaf parsley over flat leaf. All the chefs on tv use flat leaf. I think curly has a better flavor. 😃
