Ethnic Armenian Kitchen's Easter Biscuits (Kahke)

- Ingredients:
• 1.5 Kg fine Semolina, number 0 (Ferkha)
• 250 g granulated sugar
• 13 g fine mahleb
• 1/2 tbsp fine cardamom
• 1/2 tbs black seeds
• 1/2 of one nutmeg
• 515 g vegetable ghee
• 1 1/4 cups warm water (additional 1/4 cup can be added if needed)
Yeast mix:
• 1/4 cup warm water
• 1/2 tbsp yeast
• 1/2 tsp granulated sugar
Walnut filling:
• 100 g chopped walnuts
• 1/2 tsp cinnamon
• 1 tbsp icing sugar
Pistachio filling:
• 100 g pistachios
• 1 tbsp icing sugar
Date filling:
• 300 g seedless dates
• 100 g chopped walnuts
• 1 1/2 tsp cinnamon
• 2 tbsp of vegetable oil
Egg wash:
• 2 egg yolks
• 2 tbsp water
** Make sure to rest the dough 3-4 hours before shaping and baking at 350°F/175°C

Շատ շնորհակալ եմ Սօսի թանթիկ, այս “քահքէ”ն պէտք է իւղով շաղուի եւ ոչ թէ կարագով, կարագով շաղուած խմորը տարբեր առթիւնք կուտայ։ Կարելի է կենդանիի (կովու) իւղով ալ պատրաստուի։
Good question , this is always done with butter .
@@maralphayer501 it’s up to the person if they want to use butter they can, but it will not give the same consistency as the vegetable ghee. The taste will also be different.

No, it’s not crisco. It is a clarified butter that is different than a regular butter. Regular butter can’t be used for this recipe. If butter is used you will have different results.
