Delicious recipe Martine. I have a variant on that, most of the steps you've taken but I add chestnut mushrooms to the softened onions,set aside, lightly brown the chicken in a pan with oil and butter place in a casserole dish, return onions garlic and mushrooms to the pan you've browned the chicken in, pour in a tin of Erin condensed mushroom soup and bring to a simmer, pour some milk or water)into the soup tin to loosen any remaining soup and add to the pan, when fully simmered (5 mins) pour over chicken, cover with lid or foil and into oven for 30 minutes, remove lid, stir in a teaspoon of dried tarragon (optional)then return to oven for 10 mins uncovered. I serve that with mash. It's delicious and I dare say so is yours. (An odd time I might throw in a few frozen peas, green beans or even a few broccoli florets for colour flavour and bulk) The options are endless.
