It happened to me before. I contact Rhino support and get a update Rhino version and solve the issue.

I follow you, but can't rebuild the surface after loft. don't know why.
why my shape after loft is very sharp and has lots of straight lines instead of a soft croissant shape
you can pick others instead of straight line in Loft options
type rebuild, can choose curve, can't choose this surface.
