This is the one of the best batches of Mac and cheese I’ve ever made and I was a professional chef, I’m now retired , fat and old and this is a dish where portion control can easily go out the window, it went well with standing rib roast and I reduced some beef stock deglazed the roasting pan with dry sherry, lightly thickened it with some cornstarch slurry for the Ajus, oh and I used a pint of heavy cream and a 1/2 a cup of milk, I like Mac and cheese a little lose , so it’s not so thick when you reheat.
