Looks great. I have a question, for I don't have experience cooking clams. I've heard that when steamed, if one doesn't open spontaneously, its gone bad. By this method, opening them by force, how will I know if one is bad?
If it does't open it just means it has a strong adductor muscle (the white part that attaches the clam to the shell). Same with mussels. They're perfectly fine to eat. As Pasquale says, just use your nose. Throw away shellfish where the shell is broken, but otherwise, if it smells fine, it's ok to eat.

There are many variations to try. If you end up trying this way, you still might end up preferring your variation with the tomato sauce better. Worth a try 😀
I’ve researched so many recipes on line before I made these clams. We had a restaurant in town that made the absolute best clams casino ever and sorry I didn’t ask for their recipe. It was the juice that you soaked your bread in that was heavenly. They’re long gone now. What I’ve learned is that wine is a must instead of clam juice and butter should be added to the olive oil for sautéing. Clams were put under the broiler to cook all ingredients. And I don’t waste salt to hold them. I crumple up aluminum foil then open it and fit into pan. This holds the clams in place so they don’t fall over. Make extra juice to pour over or keep some aside before you add the crumbs. Mangia, dunk that bread and enjoy your time in heaven!

You will smell it. If they smell fishy, they are either dead or not fresh.
