When you brought up dogs I first thought "Sonic has dog characters?" and then I thought "why doesn't Sonic have dog characters?" I mean, I like how diverse and obscure Sonic can be with the animals they choose to anthropromorize but I feel like adding at least one dog into the cast is a no brainer.

I think the problem is that dog are… somewhat generic when it comes to designing anthro animal characters. In most media, they’re typically used to fill out crowds or as nameless extras, and it’s pretty much the same with the Sonic series. Outside of Ben Muttski from the Archie reboot, the only SEGA-styled dog characters that really have gotten some sort of spotlight in recent years have been the train conductor and his wife from the “Murder of Sonic” game.
I actually think the jackals look really cool because of their more monochrome color scheme (black and white fur) and striking yellow eyes. There’s something about the consistency with the Jackal Squad’s overall design that I just like. And yes, Infinite’s design is absolutely peak within the Sonic franchise.

Whenever I designed an OC, I always tried to stick to animals that have not appeared in the games yet. To that end I have made a frog, a mouse, a viper, a crow, a chimpanzee, a tarantula, a seahorse, a swordfish, a stingray, a coyote, an elephant, a ferret, a tortoise, a sparrow, a gecko, and a chicken
I also just created one based off the Sea Bunny species (sea slug basically) and turns out not many people knew that this was a real species so they thought I made it up LOL

My personal head canon is that Big is a tiger. Tigers are the largest cat species so the fact that he's 6 feet tall and has stripes has always been enough to justify that to me. Blaze is like, a domestic cat, which is why she's small and lanky (and she IS smol, she looks the same height as Sonic but remember how high her heels are, she's barely taller than Amy if that.) The thing about Sonic cats that pisses me off is the cat avatar option from forces has that :3 mouth, while the named cat characters Blaze and Big have regular mouths like everyone else, you have NO IDEA how much that pisses me off!
Only issue is Big's ears, Tiger ears are more rounded. Him just big cat with big heart. And... Big's mouth... It's actually more of a cat mouth than the one they put in forces; y'know... Like the kind of cat mouth you see on the images of a "grumpy" cat.

IDW is indeed completely canon to the games and thats not just Ian saying so, (like some people who hate him and/or the book would have you believe) Chris Hernandez another member hired to mange the lore would go on to back Ian's claims in seventh episode of the seventh season of Sonic Official. Its why not only did Tangle get a mention in Frontiers but she, Whisper and Surge are now playable in the mobile spin off games.
For now, at least. There’s plenty of official material outside the mainline games that were once considered canon but were eventually delisted for varying reasons.

Regarding media that aren't video games, none of the western cartoons or comics were ever considered canon nor were manga that was found in Japan to begin with. If you are meaning more about any game that isn't mainline, the only game that had it's placement outright said to be canon and then removed was Dark Brotherhood and that more due to Penders. Being delisted off Steam or the consoles doesn't impact the continuity whatsoever. The Storybook games, Shuffle, Riders, etc. are all still canon.

But ever since the series has been discontinued for… very unfortunate reasons, it’s since been declared to be non-canon.

Fang's one of my favorites as well. Personally I go with the earlier continuity of him being a weasel rather than a jerboa since weasels are commonly depicted in pop culture as sleazy and conniving, which is more in line with Fang's usual characterization. Making him a jerboa just seems kinda random, you know? Though based purely on his design, you could also probably headcanon him as an opossum, raccoon, or any sort of canine given he possesses enough characteristics from all of those animals for it to make sense.

I think Sonic versions have different types of hedgehogs changed.Classic Sonic is more likely resemble to European hedgehog while Modern Sonic is more like Long Eared Hedgehog because of his ears are longer than Classic's.

He actually did have freedom to use certain characters in IDW, because he crafted the stories.
