    "Dibba Rotti" is a popular South Indian dish, especially in Andhra Pradesh, India. It's a type of thick pancake or bread made primarily with rice flour and flavored with spices. Here’s a simple recipe to make Dibba Rotti at home:
    Ingredients:
    2 cups rice
    2 cups urad dal
    Salt to taste
    2 tablespoons oil
    Water, as needed
    Instructions:
    Prepare the Batter:
    In a large mixing bowl, combine the rice flour, urad aata, and salt.
    Mix everything well to combine.
    Forming the Dough:
    Gradually add water to the mixture, a little at a time, and knead into a thick batter. The batter should be of a dropping consistency, thicker than dosa batter but not too stiff.
    Tempering:
    In a small pan, heat 2 tablespoons of oil. Add mustard seeds and let them crackle.
    Add a few curry leaves if desired and sauté briefly. Pour this tempering over the batter and mix well.
    Cooking:
    Heat a non-stick pan (preferably a heavy-bottomed pan or a cast-iron skillet) over medium heat.
    Grease the pan lightly with oil.
    Pour a ladleful of batter onto the hot pan and spread it gently to form a thick disc, similar to uttapam or pancake.
    Steaming:
    Cover the pan with a lid and cook on low-medium heat for about 10-12 minutes. This allows the rotti to cook through without burning the bottom.
    Checking Doneness:
    After about 10-12 minutes, remove the lid and check if the rotti has cooked through. It should be firm and lightly golden brown on the bottom.
    Flipping (Optional):
    If you prefer, you can gently flip the rotti to cook the other side for a few minutes until it is evenly cooked and golden brown.
    Serving:
    Once cooked, remove the dibba rotti from the pan and serve hot with coconut chutney, tomato chutney, or any pickle of your choice.
    Repeat:
    Repeat the process with the remaining batter to make more rottis.
    Dibba Rotti is traditionally served for breakfast or as a snack in South Indian homes. It's delicious when eaten hot and fresh, with its crispy edges and soft center.
