the sugar is what thickens it to make it into syrup. if you want to use honey there are recipes to infuse the honey with the lavender! by just putting lavender right into the pure honey and allowing it to infuse over a certain amount of time. Similar method to infusing oil with herbs I think? tho you should look up a specific recipe, as there's a specific ways to prepare it so your herbs don't rot!

Does anyone know if lavender syrup is the same thing as lavender paste? I can’t find the answer to this on google. A recipe says to use paste but when I google it (a how to) all I find is tooth pastes & I know that’s not what she meant. I also find lavender extract paste recipes but the recipe says to use lavender paste or lavender extract so I am confused lol

If you make your simple syrup with a 2 sugar to one water ratio is 100% shelf stable
Or just refrigirate it in squeeze bottles.

I would say no. Syrup is usually a sticky liquid and paste is more of a thick, solid yet semi-dry substance.
