I'll certainly be giving this a try soon. For anyone out there who might make your own stocks and or soups from scratch, simply pop the fennel stalks in a ziplock bag, burp out the air and chuck it in the freezer. These will give a lovely added flavour to your broth. Also works well with asparagus stalk ends that you trim off.

My family all love fennel, and I chop it up into so many things - we _adore_ that Sicilian winter salad with oranges! - but I've somehow never before thought of simply straight out roasting it. Edit to add: Finely slicing the stalks with chopped apple or pear makes a nice variation for a Waldorf salad, too.

I can't abide anything with a licorice flavor so no fennel wennel for me, BUT I have a lovely Napa cabbage and I'll roast the bottom half of it your way and I'm sure it will be delicious.
I’m American, Italian decent. We love fennel. I eat it mostly raw, uncooked. I love the flavor and crunch. I’ve have made it into a salad, using a mandalin to slice very thin. I add navel oranges, sectioned. I put pieces of sharp aged provolone cheese. Make a simple dressing of extra virgin olive oil (, salt, very little) the cheese is salty. black pepper and what ever vinegar you like. Make it the way you like. I've always been cautious about fennel and artichoke because I grew up on a council estate on the outskirts of Liverpool. If you'd have gone into the local greengrocers or supermarket and asked for fennel, artichoke, peppers or even garlic, the reply would have been "Ye wha'?. Sorry, ye majesty, we 'aven't got any foreign stuff." - lol
That is a very sad story,I’m 80,grew up in Birmingham way back when, and of course we had never heard of so many things you can easily buy today. I worked with an Italian girl she told me green peppers were good,so I bought one gave it to my mother to cook, she boiled it till it was a grey mess , and said she had no idea why anyone would like them. True story, we have come a long way haven’t we.
Here is a fun fact Janet - Obviously I cook with all the peppers - however the green ones are the unripe that's not the fact - they turn yellow - when they turn yellow they contain 3 times more vitamin C. How good is that for a pepper. Thank you. Best, Rik

You can substitute parsnips pretty much anywhere you'd use potatoes or carrots. We love them added to our stews, or simply boiled and buttered. They go nicely mixed with sweet potatoes or winter squash, too.
Thanks, just used to use the fennel leaves as spice, so they would grow year after year as a bulb. Did not know you can use the bulb as an onion substitute.
