Thanks for the video Lindsay. When do you transplant the seedlings into a larger space? Do you have to cover the seedlings to protect against bugs or critters in the tubs or once you transplant them. Have you ever had chickens get out and eat from your garden?
We are fortunate to have Dollar Tree stores which sell seed packets 4/$1. They don't have a huge number of seeds in each packet but more than what I need for a year. We also have seed exchange meet ups where I can get get seeds for free.
Also, I let a few kale, arugula, mustard spinach plants go to seed and get more seeds than I can share with others and use myself. I have also had a lot of luck planting pepper seeds from store bought peppers and peppers I grow. I am also very cheap, oops I mean frugal, with gardening and build soil from weeds, manure, leaves and kitchen scraps.
I love growing food, just despise the bugs.
    Happy gardening!😀

With cold tolerant crops, it's best to wait until the danger of hard freezes is over. Once the plants are mature, they can handle freezes and pretty cold temps, but as little baby plants, they aren't quite as strong. For us, our average last frost date is usually mid April, so I generally look at the forecast around that time and see if there is going to be decent weather. If the weather looks good, I go ahead and plant them. In terms of size of when to plant, I wait until they have a couple of "true leaves" which are usually its 2nd set of leaves that look similar to the adult plant leaves. I've had success with many seeds gotten from the dollar store :) As for your kale plants going to seed, I recommend replanting some of the seeds, and then turning the rest of the seeds into homemade mustard. It is fantastic tasting and really easy to make. Once my kale seeds are ready, I plan on making a video showing how I make mustard out of the seeds. Like you, I also love every aspect of growing and raising food :)
