I've measured the temperature of the water of mine at max settings at 180f. Could you pull a shot with no coffee and messure the temp from the spout? Even my hot water is at 180f. Trying to figure out how to increase it

That's normal. 200F is from the source. If you do run hot water continuously, lets say 5 or 6 shots, and then measure, you will get 190 - 196f. I've tested removing shower screen
