I find it very interesting all the comments applying North American or European hygiene standards to a place that is located in neither. I would far rather eat this food prepared by craftsmen that know what they are doing and enjoy their work than soulless food prepared in a super sanitary factory employing people to just push buttons and move stuff along the line. Food needs to be touched by human hands. All the food you prepare with your family every day is not done in an ultra sanitary manner - it is tasted and mixed and touched by people and that is the love that makes it good. These men are feeding their families, neighbours and communities, not trying to kill them. It works for them and we should either stop criticizing or stop watching if it offends us.

@wolfyEmanuelle kind lady please understand that pakistan and similar countries face poverty like you have never seen before. Much worse than Palestine has ever witnessed. Many people have almost nothing. Unfortunately, this is the condition many have to live in, they have no choice but to accept this standard of living. It id admirable thst inspite of all this they continue on with their lives.
They do not maintain an unclean establishment out of malice, but because they cannot afford to do so. People buy this because for many, this is all they can get. Poverty in the US is nothing compared to that in India and Pakistan. Compared to them I don't even think you could call American poverty as 'poverty'. I literally mean it when I say there are children who live with just rags.
I don't mean to slander any of these countries, in fact I myself am from India, and I love my country for what it is. Obviously, not the whole country is like this, there are much better conditions for many others. But there are those that unfortunately have to live like this, and the massive population ensures that there are many of them.
I understand that it may be shocking to you but please do try to understand the position of privilege you are talking from and please have some empathy 😊.

Most people have no choice when it comes to the matter, yet they persevere through the troubles and tough it out. Please have some respect for them..
Also FYI, hot/cooked vegetarian food in general is fine in these countries. Its the cold/uncooked food or meat that can get you in trouble if prepared in such conditions.
For something so simple as a roti, this isn't great, but I wouldn't say it's as bad as you claim..
