I had several experience when the bread dough start to collapse, becomes too soft and dont hold its shape, if I ferment too long or add too much starter to the dough. One still can bake a bread, but one should place it in a narrow form. Still eatable, but not really fluffy.

...just remember....Clorine in tap water will kill your starter...

It is DEAD, MORT, DECEASED.
Its NOT acid its alcohol. Just mix it in and all is fine.
Never seal starter it will break a sealed jar.
Skip the first 3 minutes. Nothing important to learn. Just babbling and ads.
