    Hi mami, I have been doing idlis since my marriage, but never turned out really this well. Your presentation is sooo good, it turned out superb. Idlis were so soft and fluffy. all the trick was in soaking and grinding because I knew the 1:4 ratio but never got idlis right. Romba romba nandri 🙏

    Amma, thank you so much! It's very informative. I always have doubts about why my mom use to mix it well with hand after adding the salt. I was trained to use traditional grinder since the age of 10 back in 1987, I use to make a very good thosai and Idli back than. After marriage, I was leaving with my modern life, was not really making all the traditional breakfast. Now in my 40's I really wanted to continue making the Idli and thosai breakfast. I need the next generation to keep doing these signature dishes. Well, it not too late to learn

    I tried this recipe more than 15 times. For the mixing what I do is when the rice grinding is done I put the ulundhu batter and grind together another 5 minutes So the batter mixes evenly. Thanks for this awesome recipe. Btw I enjoy each and every bit of this video.

    My mother taught me to use chilled water during grinding both Urad and Rice so that it will not get heated up soon. Very much useful for me as I prepare the Idli & Dosa Batter every Friday here in Ibra, Sultanate of Oman. Thanks a lot.

    A suggestion. After grinding the Idli rice, I put back the previously ground urad dal batter back into the grinder and let the grinder do the mixing. This turns out excellent idlis.

    I learnt new thing from this video today. That you can start grinder and then put urad dhal that way the stone will not get stuck. Good tips. Also soak urad dhal for only 3 hours for idli fluffiness. Good tips.

    To mix thoroughly, I have followed the recommendation to add the ulundu mavu back in the grinder (with the rice mavu) and grind for a few minutes. This saves the trouble of having to mix by hand so much. You still beat by hand when you transfer it to the container for fermentation but it lessens the trouble a lot!

    Mami, I love your style of explaining the recipe. Very detailed with focus on where we youngsters can go wrong. That is the highlight. And, of course your stories, examples. I don't have a grinder. Aattukalna eppadi irukkumnu paathurken. Avlavudhan. So, if you can tell me the tips for grinding in Mixie, I would appreciate it. I use a 750W motor mixie. So, I grind the Ulundu for max 7 mins. When I see the air bubbles, I stop. When you said 30 mins in Grinder I was wondering if I am grinding the Ulundu anywhere close to right consistency. I do understand the power in grinder is different so, it need not take 30 mins but even the consistency is not similar to what you showed. Even though the consistency of the ulundu is different, the idli comes out to be soft for me :-). I use the same proportion that you mentioned for the Grinder. Still, wanted to hear from you how you would grind in a mixie if you have done that. I use a whisker to whisk the Maavu. I will keep what you said about mixing the batter and will follow it next time. Thanks again Mami.
