    Over the years I've enjoyed replicating commerically made products. Growing up, one of my favorite frozen confections was Frozen Fudge Pops. I just loved their deep chocolate flavor and velvety smooth texture. But how do you make them at home? The first thing I thought about was how similar in taste and texture a Frozen Fudge Pop is to a chocolate pudding. Which led me to the idea of just making my chocolate pudding recipe and then freezing it in individual molds. It is what I like to call "a frozen Chocolate Pudding on a stick". I was really happy with the results. Actually I think they taste better than the commerical product.

      Orrr... you could just freeze chocolate milk😂wondering how to keep the stick in the middle ? I got a square napkin and made a hole in the middle (for stick) then I put the stick in the middle, and then it’s holding it up!

    Stephanie, I know that I'm commenting late (by about four years), but I have to applaud you for this recipe. Of all the recipes that I have tried, this one is how I remember fudgsicles to be. The deep fudge taste and creamy texture are as close to perfection as anyone could want. I know some will say that this is too thick, or too rich; and that's ok, everybody has different tastes. But for me, this recipe is the one I have been searching for (for decades).
    The only problem is that it doesn't fill up all of my molds. Oh well, a little Baker's math and that will not be a problem any longer.
    In the spirit of a past erra, I bow to you and gratefully kiss your hand.
    Also, thank you so much for doing whatever it was, that you did, to eliminate the echo (reverb) of your being in a kitchen. All too often posters will make a video, and their voice is near impossible to understand due to it bouncing off of all the flat, hard surfaces in a kitchen.
    Your voice comes across quite clearly. Again I bow.

    How can I THANK you for this?!
    I've totally forgotten about this and this was my ULTIMATE favourite dessert in the summer!
    Now I will be doing this with my daughter! Thank you!
    PS: I do have a question...I wonder if you could do(or maybe you've already done) a white chocolate brownie? One of my other favourite desserts when I still lived in Canada was the Moxie's White Chocolate Brownie. And I can't seem to find a good recipe for it. Could you recommend anything? Thank you!

    They are so delicious and fudgy. I have never had real fudge pops because I have never seen any here in India. But these are so easy to make. They have a deep chocolate flavour.

    I love fudge popsicles to be really sweet so instead of using corn startch i use confectioners sugar or do half confectioners sugar and half corn starch. Works just as well for me but makes it alittle sweeter😁

      Just increase the amount of sugar. Do not skip the corn flour. But don’t go over boards otherwise they will not freeze.
      After their freeze you can remould them and dip them in melted milk chocolate, that will make them sweeter.

      You could substitute the heavy cream with light cream or milk. Although the texture of the pops will not be quite as creamy smooth.

    What can we use instead of cornstarch? that's not something we can get in the UK!

      Cornstarch is a thickener. In some countries it is called corn flour. You could use another type of thickener, such as arrowroot.

    Just curious as to why the salt is necessary? What does adding it improve?

      A little salt helps to bring out flavors.
