What about fresh banana leaves? I tried to make bánh giò but I'm not sure how to prepare the fresh banana leaves. They broke so easily and I always have some tear here and there. Do you have any tips or recommendation for fresh banana leaves? Thank you!

Since tet is coming that means there will be banh chung or banh tet. Those are not really my favorite as the pork belly are too mushy for my taste. On another hand, I do like the sweet banana version. It is amazing!
My brand had a lot of white stuff is this common and it stink , when i open the frozen pack but it not expires till 2019 , there was some discolored parts, and am storing mines in the fridge for a few days
Hi Elizabeth, the white residue / powder on the banana leaves is common with cold storage. However, the "stink" you are noticing is concerning. The smell should be mild and fragrant. Do you see any mold on the leaves? Wash the leaves well and see if this removes the odor. Of course, if in doubt, throw it out! Good Luck!
In asian country,we just hold the leaves in water for few seconds,rub them a bit,and that's over.i think this over cautiousness of westerners leads them to inimmunity.

It's common. It's the waxy residue from the leaves. Thoroughly washing the leaves before using will help to remove the white residue.

I know this is kind of an old comment but you need to heat the leaf over a flame and it will become glossy and less fragile

Once you thaw frozen banana leaves and wash them, it’s best to use within a few days and not refreeze them. Good luck!
